If I were to Jam Pack my schedule, how many days would you say I need on the Big island at a minimum? And what would you recommend doing other than this park?

You really only need one day at this park. From there, it just totally depends on what you are hoping to see/do. You could easily spend another day in Hilo and another in Kona though.
