A must watch episode with 95 year old, music loving Provvidenza, her delicious baked pasta called 'pasta ncasciata messinese' and a cheese rolling contest using a special sheep's cheese called maiorchino. (Montalbano, eat your heart out). The ingredients are:
A meat ragu using one onion, celery, carrot, garlic, 3 lamb or goat chops, 700ml passata plus 500ml water salt, meatballs
Meatballs are made with 1 egg, 500g minced beef, garlic clove, 25g breadcrumbs, salt, parsley, 25g maiorchino cheese (or a hard sheep cheese local to you), plus more to sprinkle.
Other ingredients: 4 eggplant/aubergines, 2 cubed and fried, 2 sliced and fried. 50g salami cubed, 4 hard boiled eggs, sliced, 200g cubed caciocavallo cheese.
500g short tubed pasta
If you love lasagna, you'll enjoy this - don't be put off by all the stages.

Awwwww I was tearing up at the end of this one. She is so adorable! So much time and attention to all the ingredients. I had to laugh, “Who’s gonna eat all this pasta?” And ten hundred of us out here in YT land screamed, “I will!” Love our Pasta Grannies

“Provvidenza” it is a word, a noun (la provvidenza), in the Italian language with a certain meaning. PS: It must be said that it is very unusual as a person's name.

The novel "I Malavoglia " by Verga is set in Aci Trezza, few South the town of Mrs. Provvidenza. The boat of the Malavoglia family was named "Provvidenza ". 😃 The substantive "Provvidenza " means "Providence" and the Providence is just the main character of another novel, "The Bethroted " by Manzoni.

You just can’t help smiling watching this video, especially when Provvidenza checks her FaceBook and then dances to some music. She’s pretty spry for 95!! And she has such a lovely smile! I was so intrigued by the ingredients in this recipe…very unique and, I bet, delicious!! TFS and making me smile! 😀😃♥️🤗

Wonderful episode as always! For those who do not know: Commissario Salvatore Montalbano is a fictional detective on Sicily and this is his favorite dish. A spectacular version here in the video. I have to make it.

Vicky, you have taken me to so many far flung places in Italy from Novara di Sicilia tucked away high in the mountains between Catania and Messina,... unfamiliar names but fascinating nevertheless for this very reason, ....to coastal villages with their bounty of sea food. In each , you have brilliantly captured their allure, the culture , and traditions distinct to each region ,such as the cheese rolling contest, 'ncasciata messinese' , courtesies and mannerisms which proudly speak of their heritage ;their traditional dresses changing from place to place, as you visit Nona after delightful Nona, all well into their 80' s ...who would believe it, when you watch the way they push and pummel the dough with their blue veined hands, or roll out with their precious foot long matarello , pasta after pasta without pause, except when they look up with that special sparkle in their eyes which messages 'Age is but a number'. You have allowed me the privilege to see so many charming Italian kitchens, observe their copper pots and pans lending a certain grace to their hearths ,, artefacts in sturdy wood and terracotta giving a reassuring solidity to each kitchen ,which have been painstaking curated and treasured by each Nona ; I have loved their aprons , and enjoyed their banter though I know not a word of Italian. I have thoroughly enjoyed each magical journey with you , and I am most grateful to you Vicky for having made these enchanting experiences possible for me , by watching Pasta Grannies, ....places which otherwise, in this lifetime I am not destined to see . Thank you with my ❤️ and God bless you for all your hard work.

I'm Sicilian. Every little town has its own version of pasta 'ncasciata! This one looks delicious, but it's not the only one. My mum makes another one with cauliflower, pine nuts, raisins and caciocavallo cheese. PS: Provvidenza is a really lovely lady ❤️

Goat meat is something of an acquired taste, but once you get to like it, you love it. There is a regional specialty in my country, something between a ragout and a stew, made from Ram meat with sour cabbage and a local variety on gnocchi, me and my dad are the only two people in the family who like it, but there is one restaurant that does it like no other, whenever we get the chance to get there, that is what we get, very hearty dish as well.

The' Nonna Knife' is the name I have given to a very cheap, serrated tip, plastic handled knife, which is widely available at the weekly markets found throughout Italy. Our signore use them to chop vegetables in their hands, not a chopping board. best wishes, Vicky

Aww, Provvidenza is a totty wee thing. She can hardly reach the back rings of the cooker. Size wise she reminds me of my paternal grandmother, she too, though small was mighty. Bet that ragu tasted great with the lovely fatty lamb or goat in it. Big pasta bakes like that are just so satisfying for a family to sit down to. Living alone most of the time I've gotten out of the habit of making them so much. Though I could easily make them up & portion them out when batch cooking thinking on it. I like the addition of the egg slices in it, always little treats in a pasta dish, I like to hide halved or quatered boiled eggs in the bottom of my macaroni cheese. hi James, I have a completely unscientific theory based on the Pasta Grannies - the smaller you are, the longer you'll live! Hard boiled eggs, hmm. A divisive ingredient in my household - I think grated with tons of herbs (and evoo to keep it together) alla Paula Wolfert is a really good way of celebrating them so even the haters like them. best wishes, Vicky

@@pastagrannies You could be onto something with shorter people living longer. The shorter people in my family, well mainly the female ones all outlive the taller ones. Maybe less strain on the heart? I don't know what I'd do without eggs, such a versatile ingredient that can be used in many tasty ways, boiled, fried, shirred,. One of my favourites are little egg filled coquette dishes, they make such a quick, tasty supper. some folk laugh, but as a child when I was asked what I'd lie for my birthday tea it was an eclectic mix: clootie dumpling for pudding. Figs; though in rural Scotland in the early 70's that meant a tin of figs in syrup as fresh ones were out & my favourite sandwich of the time, egg salad [with salad cream instead of mayo] & snipped chives & cress mixed in.Still love egg salad sarnies, though now I make my own mayonnaise.So saying you'e method is good too.

I call this baked pasta my mother made this a bit different as she was from Frozinone area Villa Latina to be exact. When I brought these to company potlucks it would disappear quickly and mind you a pound of penne goes a very long way in a dish like this. I had tonite the last of the leftovers of some I made a bit ago freezing part of it before baking. It makes me remember my mother who passed at the age of 87

Fun fact: in Novara di Sicilia they speak a Gallo-Italic dialect along with the Sicilian language, due to colonists from Piedmont and Liguria, owned by the Normans, the new Sicilian rulers. Even the name of the town itself tells it explicitly: Novara is quite an important city in the Piedmontese Po Valley, between Turin and Milan. Anyway, they came in the 11th century to "latinize" Sicily after the Normans took it from the Arabs, expelling them and those that didn't convert back to Christianity. And after 900 years they still speak a Northern Italian variety.

"Ammaccare" means "pousser, appuyer" in French, "to push" (up, down, trough ...).

It's ammuccare in Sicilian. In Italian, ammaccare means to dent something.
