This is also great with mushrooms and/or black olives added. I make this (and variations) frequently, learned at my mother's knee. She always called it Uninspired Casserole. My kids grew up on it, and now I feed to to The Spousal Unit fairly often.

We always have a large family vacation with all the grandchildren (5) and their parents. I make a version of this recipe every summer. I will usually make several large casseroles ahead so I'm not stuck in the kitchen!! And, the leftovers make great lunches!

And here I thought I invented rigatoni casserole back in the 70’s!! I make my own marinara, which is my Nona Amelia’s recipe and which I make lots of frequently so I have it on hand. My family loves it and I started making this casserole when my kids would be yearning for my lasagna but I might be too tired or lazy (I was a full time RN with 5 kids and a hubby to care for) to make the time consuming lasagna! Your way is almost identical as mine with the exception of the marinara!! And you made me hungry for it!! ❤

I like the idea of adding a protein to pasta especially to reduce the carb profile of the dish. I love sweet sausage, but I also love the flavor grass feed, grass finished beef on its own, so I may or may not use the sausage. I like those serving platters on the ledge.

Thanks for this. If you are watching your salt intake because of health or medical reasons, you don't really have to add salt to your water in a baked dish like this one. The flavors of the meat, onions, garlic, sauce etc will contain enough salt & flavor to the pasta while baking that you'll never miss the salted water, & have cut the amount of sodium you take in. You should wait until your water comes to a boil before you add the salt. Salt water boils at a lower temperature than unsalted water.

I love baked rigatoni! I like to mix the cheese into the pasta and meat sauce before baking though adding a bit more cheese on top. Also…for your audience….making your own pasta sauce is cheap and easy I large can of tomato purée (much cheaper than a jar of already made sauce) About 1 tbsp each of Basil, oregano, thyme, onion powder, garlic powder About 1/3 cup of tomato paste About 1/2 cup of water A splash of lemon juice Brown meat in just a bit of all of the seasonings then add the rest of the ingredients. Cook until thick and creamy It’s simple and delicious and no sugar needed. It makes a tangy sauce you can use with any pasta dish. Lasagna, spaghetti, pizza…. Enjoy!
