He's using cheat engine for it. However, for leveling up as fast as possible (in my opinion) go to the first bonfire after the dancer on ng+7 and just kill the knights and clerics for a few hours. Its the quickest way I've found to grind for souls.

If you're looking for something legit, there's no question that the best enemies in the game to farm are the three ascended winged knights at the top of the Grand Archives. Each knight drops 13,000 souls on NG without any soul-boosting effects, and you can increase that to over 100,000 per knight with every piece of soul boosting gear. If you're feeling cheeky you can even use the pyromancy "Rapport" to trick them into fighting each other.
