This exchange of knowledge that is occurring on youtube is a amazing thing. As someone who never had a dad. KZbin single-handedly has helped close that gap and help me be the father I don't know how to be to my own kids (because I never had a role model to teach me). Thank you for the video sir it matters alot more than you might think.

as a Brit my experience of BBQ is "throw meat onto a raging inferno until it's burnt to a crisp" but i picked myself up a Weber Kettle at a local hardware place for 50% off!! and now I want to know how to make good BBQ your series is really helping with a no fuss basics, hoping to cook a nice pork joint in the next couple of days.

@@786Kay786 was from GO Outdoors of all places and it was about this time of year. I got the 47cm but would recommend the 57cm if you can stretch to it. Either way you won't regret it I've been using mine all summer and getting some cracking results.

@@Banana_Cognac I did indeed christen it, had some nice results from it in the way of low and slow brisket. This year i've had Brisket, pork shoulder, whole chicken, Ribs of every style you can think, also bought me a little cast iron pan for making pit beans

Not exactly a beginner -79nyears old. Started out on a Weber Kettle. Done the gas grills, the pellet grills and the flat top griddles. Love them all. Dug out my 20 year old 22" Weber Kettle the other day. Put new grates in it. It is like brand new. Ready to get back to the basics!

I clean my Weber Grill out about every year with Easy Off Oven Cleaner Spray, Brillo Pads and high-pressure water makes the bowl almost brand new again.

At 76 years old, I have a little bit of experience with charcoal / wood burning grills . My first "grill" was a cast iron hibachi that my parents bought for me when I was still a preteen-age kid. My Dad bought a "bar-b-Que" grill from sears, and we used that for several years. Years later, when I started raising my own family , I bought a kettle style grill , and spent a lot of week ends trying to wear it out. In 2006, after I moved north to escape Katrina , my fiance had a Weber "Little Smokey Joe" grill. It worked out really well for just the two of us , until I got tired of kneeling on the concrete patio to use it .I went "all-in" and bought a new Weber 22 inch charcoal grill , which I still have today. I don't get as much "grill time" now, since my wife passed away last year . But when the weather gets bask to a comfortable temperature, I am going to bring that old kettle back out of the shed, and light it up again.

Thanks for sharing that! I was here on the Mississippi coast when Katrina came on shore. Was displaced to Illinois for around 8 months until they got me a FEMA trailer. Glad those days are behind me. Enjoy that grill and thanks for watching!

Wife found one being given for free outside neibours house. Spent 4 hours fixing it, had a lot to do before I can cook on it. Still waiting for a new thermometer to arrive so I can start. Changed grill plates bottom brackets to hold charcoal grill plate and removed some rust inside and out then sprayed some high temperature paint on the brackets and metal that I repaired. Looking good but think I should have just bought a new one instead. Thanks for this video can not wait to try it out. Graeme in Australia

This is an excellent video demonstrating. “Barbeque” and not. “Grilling” on aCharcoal burner Weber. Thank you for sharing and taking the vid to the resulting end. I do this with pork butt roasts and get a lot of compliments, it take 6-8 hours to do one but worth it.

Thank you. I've always wanted to bbq my own meat but didn't have a clue where to begin. Your instructions were easy to understand, sometimes experts tend to make it too complicated for a beginner but I feel confident enough to at least give it a try now. I started a couple of years ago when I finally started to have a little more time. Highly recommend a smoker of like the Weber Smokey Mountain or a pellet grill if you can spend that much. My very first baby back ribs turned out great and just last weekend I smoked a pork shoulder for the first time. It was better than most barbeque I've had and was very inexpensive on sale.

After having started my grilling many years ago with propane, I am being drawn to charcoal more and more. The flavour, and the patience and work that goes into it is a process that yields the most satisfying results. There is no contest between gas and brick BBQ flavour. I may need to make the switch... Thank you, tremendously for this video.

Nice video, but I don't understand American's pushing products not made in America that cost as much or more than products made in the USA. S and S is run by a veteran, but it's not made in America. He learned nothing but how to imitate an American company and put it overseas. Thanks for the grilling tips!

Thank you very much! I have had s Weber grill for many years and thanks to this video I finally managed to BBQ successfully, as well as control the grill. I now understand the technique for managing the temperature and the different cooking zones were game changers. I will have much more confidence next time and will prepare the marinades and baste the meat

Way to go Russ. Back to the basics. I used to put 2 bricks in the middle to separate the zones but the slo and sear works much better. once you learn how to use the weber you can smoke or grill anything.

I find using a large pie pan in the middle and setting the charcoal around it works really well, that way you have a drip pan, you can put water in the pan for moisture, keeps everything neat and clean temps seem more consistent throughout the cook as well. I bought a large aluminum pan just for the snake method

Sounds like a winner. The water pan is great for smoking too, it reduces temperatures to allow for better smoke. Wood smokes best between 570-750f, but meat like about 225 or so. This is why offset smokers exist. But the water pan helps drop the temperature with steam power! Also moisturizing your meat like a Komado, kind of. If smoking try playing with the wood. fruit woods smoke @ lower temps and can be tossed on top, seed woods want higher temps and you might want them under the coals. In some kettles you can even use the ash catcher for wood placement (normally smaller chips)

My first Weber was black. Got some early videos using it. It’s a good all purpose grill that you can literally cook anything on and it won’t break the bank

Good Job!!! Great detail!! This is my first Kettle Grill I own an offset Smoker which I do all my BBQ work on. I have heard from many that the Kettle does a damn good job as well, So I up for the challenge!!! The real test for me is when I try to smoke a Brisket :). Thanks again....

I modified my Webber I added a second bottom vent like the SNS and I also added second vent on the lid closer to the grill grate. I cut a Webber vent cover in half and drilled two holes to do that. I also use a slow and sear. My main reason to modify the Webber kettle vs buy a SnS is my Webber kettle is made in the USA. I have a drip n griddle I use most of the time to catch grease but I add a foil pan if my cooking a brisket or pork shoulder. The griddle gets a lil to full for larger chunks of meat.

I spent 25 years loving the fact that I had a natural gas grill, I never cooked with charcoal until I had my AH Ha moment and I started cooking with charcoal, boy I love it now, my new love, I have 5 more cookers now, I just bought the weber kettle on a cart but I did not know how to use it, thanks for the tips, PS I sub'd.

Great video on Weber basics sir!! I have 3 Weber kettles including 1 Performer Deluxe. I love them!! Best bang for the buck grill ever!! Looks like SNS created a grill with all of the most requested add-ons to the Weber. Looks like a really nice kettle right outta the box!!! I've purchased 2 pellet grill/smokers in the last few months and really like them as well...however, nothing will ever replace my charcoal grills. Thank you from central Mississippi !!!!!

Great video! I love my Weber Kettle.. I have an Oklahoma joe drum smoker, and Pitt boss, and a Weber... i use the Weber 95% of the time... the best outdoor cooking grill ever made. I'm sure that SnS version is kick-ass and has a few cooler features... I saw one at Home Depot the other day and was impressed with it.

Totally agree with temp gauge placement on Webers. But, I still love em and only use em. Simple, easy, reliable and parts are easy to replace.

Just bought a Weber Master Touch kettle grill today.Took me 1 hour to assemble it and it only wounded me once on the back of my left hand middle finger.Also picked up 2 bags of Kingsford and a bag of mesquite wood chunks a a Weber chimney.Just waiting for some decent weather to put it to use on a nice piece of brisket.

I was searching KZbin to see the difference between a Weber Premium and Mastertouch. All I ever used was Weber 22 Original or an offset smoker but was looking to upgrade to a premium , possibly a master touch. Came across this video! Premium is definitely better because you can remove the lid for a rotisserie attachment and kettlestone for pizza but damn! I’ve smoked so many things on my 22 Weber, ribs, steaks , lamb etc using indirect heat. I’m not even lying I want to buy a chuck roast just to try it . Never done one! Great Video

Loving the series Russ. I've been cooking on open fire since I was about 8. I was born in 75, so it's been a while. Went through a couple of Webers in the past 25 years of BBQ-ing. Not to mention the cheap offsets.. as you know.. the cheap offsets are garbage. Current arsenal is: for a kettle style my current favorite is a Napoleon. Added a komado grill. Bastard grill, Dutch brand (I'm Dutch). Just ordered the PK grills Go and tailgate grill. But to get back to the point I was supposed to make.. This new series of yours has grabbed the attention of my 12 yr old daughter and she takes your word over mine regarding grilling and smoking. Yes this series is good!

Great informative program for cookin on tha grill and spices and sauces, amongst bbq meats, plus my grandson loves watchin and he does a little dance to the music intro!!!!

Awesome video! I tend to think the gauge and vent are oriented that way for use of the charcoal baskets on each a side making the middle the cook zone, I could be wrong but that's the only thing that makes sense to me.

I agree, centering the the vent and the thermometer centerline exactly between two charcoal baskets would allow the thermometer to be more accurate and it would still position the vent somewhat over the meat. I actually use to use that exact method quite often, but I tend to get much longer cooks without adding additional charcoal by using the snake method on the opposite side of the meat.

I have a kamado, a PBC, and a Weber kettle. If I could only keep one, it would be the kettle because it can do everything. Direct, indirect, low and slow, searing, it can do it all.

Awesome. My buddy searched many places for a char broil kamado. Fortunately, he couldn't find it and will get the weber kettle premium. Surprisingly, he has a $50 grill, and I showed him the snake method. He did a pork butt today, and it was impressive.

well Sir. this intrigues me a lot , because I have never cooked a piece of meat so long on a Weber to achieve the same result , Weber's were intended so that you could cook more efficiently and effectively in a time reduced manner , so cooking for such a length of time defeats the purpose. Now in saying that, I do love my BBQ's and smoked meat, and I will always look for a better or different way to enjoy my meat, so I am going to try your method, and I'll get back to you, because it did look fantastic . Shoot! I'd take BBQ advice from this guy just because of his terrific accent! So easy to listen to. Conversational, not didactic. Ya' gotta' love the flamethrower he uses to start the briquets!!

Great video! You explained each step so clearly, including the how and why behind everything. For the smoked meat in the video, did you add any extra charcoal? Also, a technical question-how do you prevent sudden flare-ups from charring the meat while grilling?

No that was enough charcoal with some left. You won't get flare ups if you leave the lid on.
