The names for the variations are... inconsistent. The butter hot sauce is "Buffalo sauce". If you order "Buffalo wings" some restaurants will give you that sauce, and some will ask what kind of sauce you want. If you want teriyaki sauce, some places call that "teriyaki wings" and some call them "teriyaki Buffalo wings." The pub across the street from me (sadly a victim of COVID) used to mix the sauces if you ordered "teriyaki Buffalo wings". They had about 1/2 dozen base sauces and would mix any two (and sometimes 3) together for an entire page of options.

You did it exactly right. I'm a bit of a purist. Frank's and butter for the sauce, blue cheese dressing. A lot of places have "buffalo wings" on the menu but use something more like a sticky sweet barbecue sauce, which I find very upsetting. And ranch has its uses, but you can't just swap it in place of blue cheese because they both look similar. I'm glad you liked it. In my opinion, it's one of those genius flavor combinations that turns into way more than the sum of its parts.

The best way to cook them is to toss the fresh wings in baking powder and salt. Put the wings on a steel rack that's greased. Put them on the lowest rack in your oven at 250 F and bake for 40 minutes. Then put them on the top rack and cook for 35 mins. at 425 F. What'll happen is, the lower and longer bottom rack bake will bring the fat out of the wings and cause a batter to form. Once on the top rack, they'll then form a crispy outside crust, but the insides will be juicy and tender. Toss them in a sauce made of Frank's Red Hot, butter and Sriracha. It's the best of both worlds.

Great job on the wings!! Those looked better than wings I have had at many different restaurants! I saw that someone mentioned the original story and I just have one little piece to add. As stated in the comments the chicken wings (drummette, flat and tip) were never really used in most restaurants including the Anchor bar. At least not for serving. They got tossed into pots for stock etc. After the invention of the buffalo wing, and the spread of them across the country their price spiked up. My grandfather used to gripe about the price of chicken wings because he used to buy them for cheap to make his stocks.

Take drumette (looks like drumstick) & place rounded plump end down on plate so it is vertical. Grip top end of bone where there is less meat & then firmly push fingers downward & it will push meat off bone. While meat is still hanging on bone, you can dip meat into sauce & then pull meat off in your mouth. (If you place your fingers at top between 2 bones before pushing, I believe this works for flat pieces too.) There are videos online if you want to see it demonstrated. Personally, I don't like wings & only eat white breast meat, but I've seen a lot of people do it.

you are a great cook! Your food actually looks like the food does in America. some folks who try American classics, the food and the recipes seem to vary alot--yours are on point. Just so you know the flat is very popular and if you go to a bar or restaurant that sells a lot they will often let you order just flats or just drumettes. Buffalo refers just to the butter hot sauce combo--other wings refer to their flavors. In the South, fried chicken wings can be served in this same format instead of whole fried wings. If you want a Buffalo wing that is similar to the famous Hooters buffalo wings, dredge your wings in cornstarch and deep fry and dredge them like you did with your sauce. They are a terrific variation.

Here in my hometown of Atlanta, Georgia, Lemon Pepper wings are the big thing. You can start great debates on which place has the best lemon pepper wings and then whether to serve them wet (tossed in buffalo sauce) or dry (just seasoned with the lemon pepper). Personally I like to smoke the wings low and slow on my grill, with a soy sauce based marinade; then toss them in the buffalo sauce with a bit of honey added, for the caramelization factor, and finish them on the hot side of the grill so they get a nice glaze. I'm in the plain wings and dressing on the veggies camp.

One distinguishing thing to make note of: Just Frank’s is called hot wings. Those are good too if you ever want to try it, some people prefer that. But once you add the butter it becomes a different sauce entirely, buffalo sauce. Occasionally, you’d refer to coating them in “The Frank’s hot sauce,” and that can be confusing because to the initiated that means you’re making just hot wings, which you weren’t.

Crystal is a great cayenne hot sauce but Frank's has garlic powder added. For a proper Buffalo sauce you need hot sauce, garlic powder (Frank's skips that step) and butter. The sauce is also good on other stuff like cauliflower and pierogies. As for blue cheese or ranch, I prefer blue cheese as I think it pairs better. But some people don't like the funkiness of blue cheese so ranch is better option for them.

You did it by the numbers. I've had very few wings from restaurants that are anywhere close to the original Franks & butter. They use sriracha, teriyaki, and any number of other styles, but nothing compares to the original. Years ago, I began doing them on the grill as sort of a hot-smoked wing. On a cooler, smokier grill than for normal chicken. Then I'd toss them in the sauce and serve them up. It's always been a crowd pleaser that way too. Oh, you can also jazz up the sauce whilst not deviating from the original recipe too much by adding some cayenne powder or using the Frank's Xtra Hot sauce. That way you keep the flavor but kick the heat up a knotch.

"Buffalo" has become a very common flavor profile here in the states to the point where you can pretty much get a Buffalo flavored anything. Including buffalo chicken salads, wraps, pizzas, burritos, popcorn, potato chips.... there is even a really creamy cheesy hot buffalo chicken party dip that also works well with carrot and celery sticks. And at home I've been known to just roast some crispy skin chicken thighs or even a whole chicken and put wing sauce on them rather than going to the trouble of deep frying something and that way I get to have it more often without the impact of so much fat. These days I'm using a chicken wing sauce made by the Cholula hot sauce people. But since the chili shortage hit it's been impossible to find in stores so I have to order it online. Back when Buffalo wings first became popular you got the whole wing (drum, flat, and tip) and each counted as one wing. I have seen restaurants where there was 20 different flavors and you can combine any of them if you wanted, for example, they have garlic, and honey mustard. Or get them mixed together.

HERE'S a great recipe and can be used for a marinade for all meat & Seafood. LOW sodium soy sauce, oyster sauce , garlic. & brown sugar. The longer the better . But it will tenderizeand meat will fall apart so no more than48 hour's. If you throw this into a pan and add cornstarchit makes a great gravy . Add chicken beef or shrimp . Frozen onions & peppers...red & green & chunks of pineapple . Pour over cooked Elbows and you'll have what I call Hawaiian Chop suey , Kids love it . Fast & easy and tasted good microwaved. Or over white rice

Most people don’t eat the celery and carrots that come with buffalo wings, we’re all about the wings.

Usually wing restaurants have Buffalo sauce in 3 or 4 levels of heat and then several signature flavors. I make Garlic Buffalo or hot Teriyaki at home.

There are also dry rub wings, like Louisiana Rub, where you dust the wing after frying it. A local wing restaurant has a peanut sauce, kind of like Thai satay. A local Mexican restaurant makes a mole sauce, and a matcha sauce, which is very spicy. Garlic parmesan is another favorite, not to mention Jamaican jerked wings. Mmmm.... Brilliant upload..!

Too spicy for the mini Mecks. Mrs Meck loved them but preferred them without any dips.

Drummettes are the part (bicep) of the wing like a mini drumstick. If you researched the origin, you know that bleu cheese sauce is the original dip served with this. Also, I gather custom has evolved but the dip was for the vegetables. The veggies plus dip to cool the spicy burning in your mouth.

Buffalo wings were developed at The Anchor Bar, in Buffalo, New York! It was originally made with Durkee Hot Sause, which was bought and the name changed to Frank's Hot Sauce. And it was made with Roquefort Dressing, a sheeps milk blue cheese! Everything else are just called Wings! Like teriyaki wings, honey mustard wings, etc....

If you watch sports make them for your game viewing and then you’ll have a proper American experience! Fast fun recipe- a common snack for after school was “ants on a log” take a stick of celery cut it in half lengthwise so you have the bowl shape, fill that with peanut butter, top with raisins (or chocolate chips if raisins aren’t your thing). Great little healthy snack!

You generally pay a small premium for flats or drumettes only. I usually get buffalo, garlic parmesan or lemon pepper(my fav). If you like the ranch you made, try dipping some pizza into it!

Meck, If you ask for buffalo wings, you get wings with a buffalo sauce, but if you ask for wings they can run from mild honey bbq sauce to a very spicy wings with a sauce made with the Carolina reaper pepper.

'In a good blue cheese vomit kinda way'. LMAO! I've never done the bone twisting. I thought for sure I wasn't going to like the way you made these, but I was wrong. You nailed the recipe. Yes, fried is better. homemade dressing is better. Those wings would work in most bars/restaurants for sure. Buffalo is the hot sauce flavor. Most places just say hot wings, and then you see all the flavors. You're not the first to suggest getting only flats. Some places do it. Certainly healthier than biscuits and gravy. Keto friendly.

You can find almost any flavor wings you want but Buffalo specifies the hot/butter sauce. Also you can specify pieces but it usually costs extra.

Those wings looked excellent! You made them perfectly! I prefer frying wings over baking - I like the crispiness of the fried wings. I make them at home though using my air fryer and they come out fantastic w less fuss and limited clean up. Frank's now has buffalo wing sauce (has butter already in the sauce) which is what I use. I like really crispy wings so after I put the Frank's on - I pop them back in the air fryer for a bit - so good! Blue cheese for dipping for me. Someone mentioned in comments trying to make Country Fried Steak with sawmill gravy and mashed potatoes. I concur that would be a great next recipe to try. Just be sure to use a minute steak/cube steak (relatively thin steak tenderized by puncturing into the meat). Love your channel!

Buffalo wings isn't named after a sauce it's named after Buffalo, New York. In the South we call them Hot Wings because there is so many different flavors to choose from my favorite is a creation invented at Strip Clubs in Atlanta, Georgia Hot lemon pepper (Franks or Crystal's Hot sauce mixed with lemon pepper seasoning) They also have hot wings that instead of sauce they use dry rub seasonings. Also play with different flavors when I make them at home I mix honey, Hot sauce & butter on our wings. Welcome to one of our American food addictions 😂

You did a great job on the prep! They looked perfect, if tiny. Those must be some mini chickens, LOL! The reason you use Frank's over other brands (Crystal? Really? It's Louisiana hot sauce, and not a great one, at that.) is because Frank's is the original, as you correctly noted, and it will also give you the most accurate flavor.

You’re a genius. Yes, flats are the best. There are SOME places you can order flats only, but more expensive. I buy a few dozen wings…cut them into flats and drums…use the flats for Buffalo wings… And freeze the drums for later use to make a conventional breaded fried chicken thingy. Also… Buffalo wings are even great just dipping them into PLAIN SOUR CREAM!

Honestly, there is very little difference between the various brands of cayenne pepper sauce. Frank's, Crystal, Louisiana Pure, RedHot, Tapatio, all just about the same. A couple of them have a little garlic added, but otherwise they fall right into line. There *are* of course hot sauces that are genuinely different (and in some cases much spicier, e.g., Dave's, Woman Scorned, etc.), but they're considerably less common. Every chicken wing I've ever seen was hinged, the upper wing and forewing connected together by a joint. I think the ones you've got have been cut apart. Which is probably a good thing, but I've never seen them that way. Buffalo wings were invented by somebody who wanted something he could affordably make and give out as a freebie. I don't remember whether it was a restaurant owner who wanted a cheap appetizer, or a bar owner who wanted cheap food to make people thirsty. They've been used both ways. Either way, he chose chicken wings because until then they were a very cheap cut and not much favored, and he slathered them in hot sauce to make them more interesting, and possibly to get people into macho "I can eat more of these than you can" competitions. They proved to be so popular that other establishments copied the idea, and then they spread (from Buffalo where they originated) to the rest of the country. At some point people started dipping them in additional sauces, principally ranch and other related salad dressings (blue cheese dressing, buttermilk dressing, etc.), but yeah, things like barbecue and honey-mustard are also sometimes used. For a while buffalo wings were so popular that the price of the raw chicken wings rose to the point where some restaurants started making (boneless) fake "wings" out of cut-up chicken breast meat, which is pretty ironic. And then the concept of "buffalo chicken" got broadened beyond wings, so these days you can get e.g. a buffalo chicken sub.

Probably among the best American tapas or mezze: meant for sharing with friends at a pub (with beer, not wine). Sadly, wings have become expensive in the US (when invented, wings were a trash cut they were practically giving away).

sausage gravy can be adjusted for taste by using a more seasoned sausage and/or adding a dash of hot sauce or cayenne pepper to the gravy as well
