I would not go 3%. The sweet nature of Franks/Crystal sauce lends itself more towards 1.5%. Only go the 1.5% route if you are well versed in the arts of fermenting food. You need to clean your equipment and containers with starsan and other safety steps.

I would ferment the peppers first then blend them. That way you don't have to have all that salt in your salsa and you still get that funky fermented taste.

Idea for an episode: WonderTart from the game "Cuphead: delicious last course". Unfortunately, we don't even know how it looks like; and the ingredients (distillery dough, desert limes, pineapple mint, gnome berries, icy sugar cubes and one living soul) are unavaileble in our shops. Yet I'm sure, that you could improvise something with regular dough, limes, pineaple, strawberries, sugar cubes and love. ;-) Just a thought.

I'd imagine their flavor profile would complement the wasabi quite well. Its so crazy that he brings up Shishito peppers now. My neighbor adored them and had a huge garden with tomatoes, cucumber, zucchini, jalapeno, and shishito. He died from a heart attack a few days before this video aired after we picked some of his peppers with him. He's been close to the family since I was a kid and I saw him collapse on his porch. 😓

I'm happy to see that the potato flake recipe turned out well here, because that was my Grandmother's "secret recipe" that I learned from her twenty years ago. Although her version went with "double dipping": dredge in standard flour/spices mixture, then beaten egg, then the potato flakes by themselves. It usually turns out crispier than standard recipes, but like Babish said, you have to be more careful about overcooking.

I also know this game that has these wasabi wings that you can make in it. I was in doubt that Babish has made a food item from that small-ish game, until I realize that this version is from The Simpsons from reading the title.
