What a wonderful winter-time recipe! I cannot remember if my mom would make this recipe with beef or lamb, but she would add little bit of cumin instead of thyme. I may try it with pork too.

Your recipe calls for 3.5# lamb. I have a 2.25# lamb roast -- I think it's boneless, but I can't know for certain until it's defrosted. I also happen to have 1# ground lamb. Would this work if I browned the ground lamb, breaking it up, and adding it near the end? Do you happen to know how to adjust the time should I cook the stew in a pressure cooker (ie Instant Pot)? Thank you for your help and sharing your recipes. I use them often.

We have a simpler version in Norway. Put layers of lamb, layers of cabbage. Salt, pepper and flour inbetween. Bring to boil, reduse & simmer until tender.
