A lot of truffle vendors have that vibe, probably because they’re carrying around possibly tens to hundreds of thousands of $ of product at any given time. And YES, most of them are packing heat for real.

As a indian, there was never anything in india called "curry" It's just made up word by britishers What we have is gravy(thicker version of soup) or broth(liquid version of soup) containing spices,chilly powder, turmeric,etc

That is, unfortunately, true. The country with the most Michelin stars outside of Europe or America is Japan, and the majority of their Michelin stars go to restaurants specialising in French cuisine rather than Japanese

Hahahahaha that place started out BAD. This is not the same case... There are some kitchens that have a LOT of screaming... But most professional kitchens don't... And this one particularly is a Michelin star restaurant so... Better not hear any screams in the dining area lol!

I have the feeling that most of these fine dining restaurants end up being the same: American attempt at French cuisine. Some use a few different ingredients, like this one, but in the end all is sous-vide, scallops, caviar, truffles, etc...

I think Indian attempt at French cuisine would be more accurate no? Or fusion, whatever is the more appropriate wording. Imo it's the main issue I have with a lot of "fine dining" and or michelin star restaurants, it's primarily french style cuisine. I think it's very unfortunate that the michelin star has so much power as it does cause it feels like it attempts to homogenise all manners of cooking-cultures rather than embrace the differences.

100%. Either that or they go in the direction of creating really weird molecular gastronomy dishes out of Indian cuisine. Dhamaka is a great example of a Indian restaurant that is fine dining but true to it's roots.

@@sourabhchikode575 French sounds more 'elegant' in English, that's why a lot of upscale places have French or French-sounding names. It works the same way in India, where English names are 'posher' sounding than native names. Now that English-named places are becoming more affordable to the middle classes, you see French and Italian names popping up more for expensive restaurants.

@@sekharapramod7819 that's what I already replied - if they are naming a place completely inconsistent of it's actual roots/meaning, then what else compromises/changes are made to the food in it. By the way- English named restaurants in India are most of the time famous for their ambiance, and not for their authenticity. Authentic traditional tasty Indian food is still made in India at Indian named restaurants.

Wait is it? As in small or large? How many people do they seat? I don’t know anything about Michelin star service, so idk how many servers they have on each night and if they even have sections or one table per server that rotates 2 or 3 times per service… …I’m imagining all of the cooks are full time, which is why I ask about the servers specifically. I’m sure this kitchen could have like 8-10 total staff, but I have no clue about the rest of the service they offer there (or at any Michelin star restaurant tbh) 🤔

I ate at Indienne on a whim the month before Michelin announced its star. Had reservations at a Jose Andres joint but place closed for the night due to a plumbing issue. Indienne happened to be in walking distance and someone dropped out when I called them up.

As someone with no experience in the food service industry, it seems like these chefs have 12+ hour shifts. Do they have longer breaks in between? Or more off days than other jobs? Otherwise this seems like a kind of stress you cant do for long...
