@15:00 what a beautiful cake! My baby sister was a cake decorator for 20 or so years. The Swiss Meringue buttercream was my LEAST favorite icing to make. That method looks less aggravating. Would have loved a gratuitous crumb shot, maybe next time.☺️💕

What type of dehydrator are you using. We have a few of the circle type but I am looking to upgrade to a square one.

We did a ton of research and ended up getting a LEM; one of their full metal versions. We wanted something sturdy that would last for many years and selected a model with all mechanical/analog controls so if a part broke we could fix it. It is a BigBite 10 tray model 778A. Thanks for your comment.
