A Day of Marmalade Making 🍊

One thing I look forward to in the cold, dark days of January is the arrival of Seville oranges in the shops and markets. They usually appear mid month and often sell out fast, so grab some if you see them!
Not only is the marmalade they make utterly delicious (served on sourdough toast with lashings of salted butter is the only way to be consumed in my humble opinion) but the aroma the bubbling jam exudes while wafting throughout the house can only be described as heavenly.
I’m preparing a KZbin video where I go into detail on how to make marmalade that I will post soon, but in the meantime here’s the recipe I use, taken from @bbcgoodfood
Ingredients
500g whole Seville oranges
2l water
1 ½kg jam sugar
Method
STEP 1
Boil the whole oranges in 2 litres water until very soft - it will take about 2 hrs. Pour the liquid into a preserving pan or a large saucepan.
STEP 2
Cut the oranges into wedges, flick out the pips with the point of a knife then gently squeeze the wedges over the pan as they’ll be very juicy. Thinly slice them, then add to the pan with jam sugar. Dissolve over the heat then boil for 7-10 mins, stirring occasionally, until a little of the mixture dropped onto a chilled plate sets and wrinkles when you push your finger through. Leave to settle for 15 mins before potting into sterilised jars.

Quick question: where do you get your lids? I always have to use Ball lids for long term preserve storage and you have Bon Maman type lids for sealing. I've never seen those here in the U.S. And do buy yourself a funnel, it makes life so much easier!

I just reuse the old jam jars with the ‘popping top’ bit on the lid. They work perfectly, maybe the style is different in the US?
