Definitely the best ive seen so far. Quick question, if anyone knows. Can the pin bones be pulled with tweezers in a one at a time kind of way. This method works great for salmon, but ive never tried on a smaller trout.

Exceptional instruction and video. I do this method on our wild salmon and other species here in Alaska. What is particularly nice about this instruction is how relaxed he is, and not stressed nor in a damn hurry, like trying to show us how fast he can filet, which is what every other video on the subject tends to be centered on, as if the fileting of a catch is a nuisance to get over with quickly. I find it relaxing and enjoyable and this guy obviously has the same attitude. The videographer did a heck of a great job too

I really like this video. Your approach both to filleting and removing the bones is better than any of the many dozens other videos I have seen on the same subject. However, you would refine your tutorial even more by adding a comment on what to do if you intend to eat the trout’s skin: Scrape the fish scales off the skin first thing, even before you gut the fish! I live in Norway and have been fishing brown trout since the late 1950s. I always eat the trout skin - scaleless - when the fish is prepared in a frying pan or in an oven. Jummy!

Thanks for the comment and suggestions. We have several videos showing different steps in the process. I’m looking to film brand new high resolution videos of the entire process from gutting/cleaning, filleting, skinning, removing pin bones and I can through in other options as well. I actually prefer to eat the skin. With trout I didn’t need to worry about scraping the scales off. They just cook off. With other types of fish or maybe very large trout I could see scales being more of an issue.

Love it! Coming from a back-country perspective, this is exactly what I was looking for. The gutting and preparation is often on some granite rock near a shores edge, bent over and trying to limit the spread of smells and mess to avoid attracting bears. This looks like a no-nonsense approach to getting the job done in the easiest way possible. Cooking the fish and then pulling out the bones (as most tutorials show) is a NO GO as now you have fish scent all over your hands. This is a great pre-cook solution to that issue. Thank you!! A+

just used this vid to clean a dozen beautiful 10-16" 'bows we caught the other day. Its quick and super efficient. Make sure you sharpen your knives before hand because the one used in the video is wicked sharp!

Technically, this is called butterflyimg a whole trout, but your technique and tips on it are really good and easy to follow. As an aspiring chef, i have found better techniques watchimg KZbin than what they teach at culinary school. I will definitely add this to my repertoire on butterflying fitsh. What i like best about this technique is that you are always going around bones and not through them which keeps the knife sharper longer. Awesome video!!!

I like this video. I've seen many ways to clean trout. I learned from my aunt who lived in northern Minnesota. She would fillet a northern pike, remove the ribs and then score the pin bones by making a vertical cut every 1/8" the length of the rib bones. The pin bones cook up the same as when you scored them. Nice technique you show.

I have always cooked my trout whole. This year is the first year I've started filleting my trout as I have been smoking them on the traeger. I was so used to being able to just remove the bones post cook in fell swoop that I forgot that pin bones even exist. Excited to do this on my next batch

just finished filleting 2 rainbow trout using a novelty samurai chef knife that I use for carving meat...absolute nightmare. decided to look up various methods afterwards and this is the best one I've watched so far. I just filleted a 5lb wild artesian Rainbow Trout from the lake here in Wanaka using your method. The ensuing ceviche was bone free and delicious. It almost justified the ridiculous amount of fuel my boat burned to get it. Thank you.

This Is great. I never filet my trout because I don’t want to waste any of the meat. I actually peel off the bone from head to tail using my fork once its cooked and on the plate This Technique is thorough and meticulous yet easy and reasonably quick!

I have a relatively large trout and I tried to fillet one today (it was my first time) and I didnt do such a good job but this is gonna be really helpful

I'm cooking trout over coals for my wife's birthday this weekend, just us and a few friends and to put it mildly, i have been sh##ting myself. but not any more thanks to your video. What an amazing tutorial, detailed no nonsense clip. after watching this a few times i feel confident to tackle the task. I'll let you know how it goes this weekend. thanks again.

Love this video. Are these trout cleaning/de-boning fundamentals the same for a Seabass at all?

Thanks J NP, No seabass would be filleted differently. You would cut the meat off their sides without even gutting them. They have a much harder and different bone structure than trout or salmon.
