A fierce battle over bread! A Japanese bakery with long lines! Amazing Skills of Japanese Bakers

This time, I took a photo at Kogi Kobo Brooklyn Nagaoka branch, a bakery located in Nagaoka City, Niigata Prefecture. We use carefully selected ingredients and make everything in-house, including the custard cream.
Many customers came to the store at noon, and there was a line outside.
[Brooklyn's commitment]
☆Handmade
The various fillings we use at Brooklyn are made as "handmade" as possible. The pizza sauce for the pizza, the chocolate cream for the chocolate bread, and the ingredients for the curry bread are all handmade with love. The ingredients we use are handmade as much as possible to bring out the flavors that we are particular about.
☆Material
Fat: We use additive-free butter from Hokkaido whenever possible.
Ham: The ham we use at Brooklyn is a carefully selected ham that uses as few additives as possible to bring out the flavor of the meat to its fullest.
Anko: Koshian is a carefully selected organic bean paste made from azuki beans grown organically and without pesticides.
☆Water
We are also particular about water, and use "magnetically activated ionized water." By activating and ionizing tap water using a powerful magnetic field, it converts it into soft water with finer particles. This ionizes the subzinc acid contained in tap water and reduces the chlorine odor, making the water kinder to our bodies.
☆Salt
Our bread does not contain any additives. Because it uses moist salt containing bittern, it contains a lot of magnesium, which is said to be difficult for Japanese people to consume. We use ``Teshio,'' which is made by adding ``bitternard'' to seawater salt made using a traditional method and is highly nutritious and rich in minerals.

This was such a pleasure to watch! The workers were like a well oiled machine, everyone working together in harmony, each doing their job and turning out beautiful looking yummy breads! So many varieties. The customers came in orderly, got in line, no loud talking or complaining about the long line like they do here in the US. Everyone waited politely and even the little ones were quiet and polite. Japan is just different, they really believe in customer service and providing great products.The customers support this bakery and the employees appreciate it. Things are so different. If Americans have to wait 5 minutes more than they think they should, there would be yelling and cursing. Japan, just another reason I love you!

Excellent watch! The amount of bread types is amazing. The bakery group work like a well oiled machine. I often see staff replenishing bread but dont understand why the remaining curry bread is not left on tray but taken off. What happens to that bread? A most enjoyable experience thanks. D💜

Some items are the best hot or warm,curry bread, pizza, hotdogs. You don’t want to be stuck with the lukewarm one and the next person gets the hot one. Maybe they put the curry breads back out at the end of the day, most of these places have discounts before closing

Wow.....everything looks delicious and workers are so organized and busy....no wasted energy and working without supervision.......They definitely know what they are doing and doing it quite well. I would like to try one of everything......
