Cappy cans Celeste figs from the tree in our yard with the 3-easy step method. Hot jars, hot utensils and lids, hot figs.

Wow, love that freezing technique... Genius! My parents have three huge fig trees in there back yard in Bossier City Louisiana... My oh my are they delicious!! Thank you for this great video!!

To start off I like your shirt! I'm from Galliano, Mom would make figs but don't have the recipe, & yours look alot like hers. I love the thick syrup w/ them. On some homemade bread, man you know us cajuns! Thank's & will give it a try.

I always quarter my figs so they will cook a little easier to spread. Also add 1/2 cup of lemon juice to keep them bright. And yes, cook about 2 hours

Such a simple recipe with a lot of patience on top. Loved the red beans reference. You have to know when to take your time and every now and then pay attention to your pot. Just a perfect presentation for us Southern girls with parents "down the bayou".

Why is a “dash” of lemon juice added to the figs?

Mostly just for taste, it also kills germs.

The reason I got you tub ,is to help the flavor and preserve the figs,I put up about 25 jars, and they put 1 teaspoon per pint and 1 tablespoon per quart of lemon juice,and I added ginger chunks while figs cooked and took them out before putting in jars.Because I was diabetic,I used Stevia,and the same amount of cups,but a tiny bit of pink Himalaya salt to kill that bitter taste of the stevia,and a dash of honey.

I love your passion and personality! I would have to substitute that sugar. Can I use stevia and honey? Also, can I use a pressure cooker? How long is total cooking time?

I've read that the sugar is actually the preserver therefore u cannot substitute...

I cut my figs into quarters because I have found a worm inside a fig, on occasion. So, "what's worse than finding a worm in your figs? Finding half a worm. LOL
