How to Make the Ultimate Cheese Platter, using 6 iconic French cheeses and many delicious World alternative cheeses. Live Tasting / Smelling session included !
To put together the best cheese plate, you must have diversity in milk types (cow, sheep, goat) also in texture : soft, creamy, crumbly, firm and of course in strength too, mild and gentle to naughty and deliciously stinky.
COMTE CHEESE
--------------------------
strength : 2 out of 5
Its a pressed and cooked cheese made from Cows’milk
Produced in eastern France / moutains of the jura
Alternatives :
- Swiss Gruyère
- Young british cheddar
- in the us, i’ve found
- Pleasant Ridge Reserve cheese, from UPLANDS CHEESE in wisconsin
- Tarentaise cheese from Spring Brook Farm in Vermont
ROQUEFORT CHEESE (don’t spell the T)
----------------------------------
strength : 5 out of 5
It’s an unpressed and uncooked cheese made from SHEEP's milk,
Comes from the SOUTH of France, more accurately from the AVEYRON region.
ALTERNATIVES
Here are a few international alternatives to ROQUEFORT cheese :
- ITALIAN Gorgonzola
- British Blue STILTON
- Danish blue cheese
- or even the blue Maytag.
OSSAU - IRATY
-------------------------
strength : 3 out of 5
Its a pressed and uncooked cheese made from Sheep’s milk
Coming from south-west France, in the pyrenees mountains.
ALTERNATIVES
Here are a few international alternatives to OSSAU IRATY cheese :
- Spanish Manchego is the first that comes to my mind
- Young Italian Pecorino as well
- From the us Gran Queso, in wiconsin.
MOTHAIS GOAT CHEESE
----------------------------------------
strength : 3 out of 5
SOFT-RIPENED cheese made with Goat’s milk, wrapped in a chestnut leaf,
Coming from western France, a region called POITOU
ALTERNATIVES
Any creamy goat cheese would work, so :
- Italian robiola di capra
- Bonne Bouche cheese, in Vermont
- or in California : Humboldt FOG from CYPRESS grove,
EPOISSES CHEESE
-------------------------------
strength : 4 out of 5
Washed-rind Cheese made from cow’s milk, coming from Burgundy, in the center of France.
ALTERNATIVES
so Here are a few international alternatives to EPOISSES cheese :
- Ardrahan cheese from Ireland
- German Limburger
- British stinking bishop
- Italian taleggio (g-i-o)
CHAOURCE CHEESE
--------------------------------
strength : 3 out of 5
Soft-ripened cheese made from cow’s milk.
Coming northern east France, the CHampagne ardennes region.
Even if it has its own personality, in many aspects, it is similar to BRIE cheese, and that’s why I chose it.
ALTERNATIVES
As BRIE cheese is produced all over the world, it is the perfect alternative to CHAOURCE CHEESE. Example :
- Brie from King island dairy in Australia
- Cornish Brie from the UK
- or really, any Brie cheese in the US.

Just gotta say. I really appreciate you mentioning US cheese too. Most people in the US don't know what good cheese we have that's local. Also I'm from Wisconsin and had some Gran Queso a few weeks ago. Thanks a ton Alex!

@revylokesh1783 3 жыл бұрын
Yeah. For a country as big as the US, there's bound to be a region that specializes in diary products. So you've got Wisconsin. And since the love for good cheese is universal, there *_must_* be some small local producers of high-quality cheese. The difficulty is just finding the right ones.

I'm a fellow Frenchman and I leave just around Paris, so I have the chance to be able to buy all these wonderful Cheeses (Because there's also an awesome Cheese shop right next to my place), and I have to admit that my American friends would go CRAZY for it! 😁😁 I've spent a lot of time in Florida for vacations on multiple occasions and I can tell you guys for sure that sadly, there aren't such tremendous cheeses like these over there. Still, I was able to find some pretty decent Italian cheeses there. But if like me, you're a "Cheese lover", you guys definitely need to plan a trip to France! And remember once there to ONLY buy from specialized Cheese shops and absolutely NOT from Supermarkets! This is mandatory if you want to experience THE genuine French' cheese experience! 😉😉

I went to France last summer and I ate Comte for the very first time and I was amazed but then I went and visited the tunels where they make the roquefort cheese and tased it for the very first time and boy was I in love. I brough home half a killo of chese that was ate not two weeks later. And nothing comes close to roquefort so take that gorgonzolla and place it on the cheese board because it is indeed delicious but it is not roquefort.

My older sister had a french exchange student and since i was at a very young age at that time i wasn't realy able to communicate with her, due to a lack of language knowledge. But I pretty well remember how exited Delphine was when she found some cheeses she knew and convienced us to try them, Comte was one of them. That's clearly when my cheese-addiction started :-) Since then i tried cheeses from all over the world and the sheer range of tastes is incredible. Mercie, for enrichen my knowledge again.

Actually Mexico had one of the best cheeses in the wolrd this year called Flor de queso. Also, Manchego and Oaxaca are probably the most known mexican cheeses and they're very good but also very fresh so it's not really strong. Anyways, cheese is beautiful no matter where it's from as long as it's properly made.

J'adore Comté ❤️ The only cheese of this type that I prefer is Beaufort. Comté is easy to find where I live in Devon, UK but Beaufort is much harder to get. There is something oddly sexual about watching someone eat and react to the taste of cheese.

I think it just gets back to watching someone enjoy themselves and experience the pleasures food brings, add in a touch of envy and jealousy and you have food porn

lactose gets transformed in the cheese-making process; you should be able to have most of these, actually. Or there's always lactase pills.

Olivier Pernet My pal, I tried to eat cheese a few days ago and BBOOOYYYY my stomach and skin absolutely hated me. But maybe it's because the cheese was a type of Mexican cheese that's 'fresh' I need me some lactose pills.

I like to say that Eppoisses is so delicious that it becomes embarrassing when pushed to select a favorite. One would perhaps enjoy announcing something obscure or individual, but we all love the Eppoisses most.

+Robin D Good cheese is expensive even in France. On this board, there is at least 45€/$55 of cheese so that's more than $45/kg, given his bag weighted 1.1 kg. (I live in Paris, and that's how much cheese costs in quality shops like this one)
@Uryendel
