A very long wooden farmer’s table would be a great replacement for an island. A great place to prepare or set out food and a great place to sit on stools which can be removed easily. It could be the centerpiece of the entire kitchen area

If you rent out for weddings etc. they might want to bring in a caterer. You would then need lots of counter space to prepare food for a large amount of people.

How old is that tile floor? It looks to be in perfect shape. Might be nice to keep some of the original features. I enjoy watching your progress. Nice to see your wife and son.

I'm sitting the car waiting for someone, in a tornado wared area just south of Houston. I'm safe enough I could run into the building if needed. But watching definitely takes my mind off the weather. It really is true that you don't realize it's more than content you're providing, right now it's a few minutes of calm in the storm. That's priceless!

Your daily vlogs is a highlight in my day. I do not miss a single episode. You're doing such a great job. In South Africa, we have similar sausage in a roll. Here it is called a boerie roll in English or boereworsrol in Afrikaans. Basically a beef sausage with coriander and some other spices in a soft hotdog roll, with a tomato and onion stew or tomato sauce or chutney.

The more I watch .. the more excited I get 😊 I’m envisioning a farmhouse type kitchen, on a large scale, like they have in Manor Houses. With rustic cupboards & units, copper pans hanging .. & a warm cosy feeling ❤️

I absolutely love this kitchen, it is beautiful & will be magnificent when you’ve finished. I personally would go for a very large oak kitchen table in the middle, but I know if you go for an island, you will do it very sympathetically to the room ❤

I was thinking the same thing about a large oak table for the middle of the room. I know it wouldn't be period to the structure, but a medieval banquet table would be awesome. You know, somewhere you can seat your 20 closest friends. LOL

Personally, I would always opt for a table rather than an island. Though if you want an island, it can be put on wheels if the plumbing is not in it, so you have the best of both worlds. Thank you for the video! Have a gala week!

I kinda hated to see that one section of tile torn out. I loved the design. Simple but classic. Every kitchen needs an island for extra workspace. 😊

No island for a traditional kitchen! You could put an antique table in there if you like, but that could be something you move here and there as you need it. Lovely work, Billy!

Hi Billy, I’m glad you’re thinking about an unfitted kitchen. A historic building wouldn’t have modern cabinets. I don’t think the sink should be by the fireplace. It might look to crowded in a corner. Think about balance. Big stove to balance the fireplace. Try getting big cardboard boxes to represent the needed appliances and china cabinets then move them around until it feel right. I love watching the progress.

Thank you so much for sharing the part where Little Archie and Gwen came to visit. I've missed seeing them and it's so good to see how much baby Archie has grown! You should put in a stand alone island. It can be an old piece that you find at an antique shop. The old kitchens did have rather large wooden islands that were both beautiful and highly functional.

I agree with others who suggested a large farmhouse type kitchen table, so homely and cosy for eating (or doing food prep) together. If you're keeping the beams exposed, then I'd suggest Chestnut for the table as well.

An island would be lovely with all the space. Extra storage, possible outlets, maybe a smaller fridge. My dream kitchen would have a sink and a griddle on the island lol.😊

Steve can compete in an IronMan match. His arms are huge! All that weight gone is going to make a difference in the life of the ceiling above, most definitely. You could have an island that is movable that could be used in other rooms/locations or if required for outside catering.

Islands in a kitchen are so helpful. Both for prepping veggies and especially for rolling dough, Pie crusts and pastries… I would certainly recommend one in any kitchen.. You and your amazing team are moving quickly getting the kitchen demolished. Great team work.

Love the idea of having a beautiful long table where people can sit and enjoy home cooked meals & conversation in the warmth of that great kitchen…..much preferred to a kitchen island which actually tends to separate people sitting too high up to accommodate children and family gatherings.

2 important features I wish my tiny kitchen allowed for. Kitchen that big should have 2 sinks. Island sink (or other location) for prep work and a bigger one for washing big pots by hand. A baking area where the counter is lower for kneading (especially needed for us short people) and a cabinet dedicated to baking supplies.

Given the size of the convent, I can see its future uses as a conference centre, etc. - so wouldn't a commercial kitchen be size-appropriate? I would think that electrical sockets on an island would be extremely helpful in food preparation for larger crowds, which is what such a venue would attract.

I would regret not putting an Island in. The base could be made to look like a traditional piece of cabinet and the top could either be granite to compliment what is already there, or butcher block.

every time I see the court yard of the convent I am amazed at how beautiful it looks and how much you had cleared to make it look so beautiful and Ricky had done a lot on that court yard. I hope Ricky is doing well with his recovery and look forward to see him with you and Sean again. Miss seeing him on the videos. I love the way Archie says no when you asked him what he thought about the walls being pulled down. I wonder where Sean gets all his energy from I would be tired after the hard days work he does. The kitchen needs a big oak or chestnut rectangular table used like an island. All kitchens that size had a minimum of one big heavy wood table for cooking and preparing food. It would have a butcher block as well and a table for baked goods.

Hi, Billy ! It doesn't matter if it's a commercial kitchen or a domestic kitchen both need an island for food prep work. Just imagine the island and all the pots and pans hanging over it and out of the way. You'll need to add some electric sockets to the island for kitchen gadgets and things like that. I can honestly say it would be a professional looking kitchen that anyone would love to cook in. IMHO.

Our local hardware (buntings) usually has sausage in bread for sale on the weekends, with or without caramelized onion or sauce. Various charities use it as fundraising. For some reason it tastes better than if you cooked them at home :)instead of an island have you thought about repurposing on old shop counter or butchers block. And or a huge table to use as eating or workspace …

Period butchers/ preparation island? With a wrought iron frame above to hang pots. A wrought iron hanger in the hearth to hang a cauldron for stewing and a hand cranked broiling rack.

So interesting about the beams and the rubble. Sean is a fount of information, another great reason to have him on your team. I wonder if you can reuse any of the tiles as some popped of whole? I do think you need an island, you will find it so handy for both storage and preparation of food. If you ever host a party or small event in the kitchen it will prove to be a valuable asset. You have to think long term and multi use.

One quality of life thing to bear in mind is that if the sink is opposite the window you'll benefit hugely by having a light directly above the sink. There's nothing more annoying than having to constantly lean to one side just to get enough light to see if you've got that plate properly clean.

Looking good chaps! You've carefully only hinted at the future uses of the convent Billy but I don't think any of us are any the wiser lol Are you going to: - live in it? - hire it out as a 'family party pad'? - sell it on? Well I'm sure we'll all find out in the fullness of time! Incidentally, did you get the idea for the switches supplier from Oli and Camilla at the MMM? Compelling viewing as usual 💜

That little Archie is such a cutie, so good to see him and Gwen...fascinating what the general purpose will be in the kitchen, you obviously have some sort of idea for it...I'm sure it will be amazing, especially filled with antiques and sausage sandwiches...yum...
