📋 Ingredients:
◾ apple jam - 400 g
◾ kefir - 150 ml
◾ soda - 1 tsp
◾ egg - 2 pcs.
◾ oil (or melted vegetarian butter) - 60 g
◾ cocoa powder - 3 tbsp
◾ cinnamon - 0.5 tsp
◾ a pinch of salt
◾ flour - 250 - 300 g
Chocolate glaze:
◾ chocolate - 150 g
◾ sunflower oil - 1 tbsp
◾ roasted and chopped nuts - 100 g
👉 Preparation method:
1️⃣ In a large bowl, mix apple jam with kefir. Add soda and leave the mixture for 5 minutes so that it begins to foam.
2️⃣ In a separate bowl, beat the eggs with a pinch of salt until smooth. Add them to the jam and kefir mixture. Then pour in the oil or melted butter.
3️⃣ Sift the cocoa powder and flour. Add cinnamon to the mixture. Gradually add the dry ingredients to the liquid, kneading a homogeneous, slightly thick dough (like thick sour cream). Adjust the amount of flour depending on the consistency.
4️⃣ Grease a baking dish with oil or line it with parchment. Pour the dough into the dish and level the surface.
5️⃣ Bake the cake for 35-40 minutes at 180 °C until cooked. Check with a toothpick - if it comes out dry, the cake is ready.
6️⃣ Remove the cake from the oven, let it cool slightly in the pan, and then transfer it to a wire rack.
7️⃣ Break the chocolate into pieces and melt it in a water bath. Add the sunflower oil and mix well. This will make the glaze smoother and shinier. Toast the nuts in a dry frying pan until golden brown. After cooling, chop them with a knife or using a blender to the desired size.
8️⃣ After your cake has cooled, evenly pour the chocolate glaze over its surface, distributing it with a spatula. Immediately sprinkle the chopped nuts on top while the glaze is still firm. Let the glaze set at room temperature or in the refrigerator (15-20 minutes).
