I love the spirit of the Cooking at Home series. They're simple, quick, thrifty, wholesome recipes that even novice cooks or people of limited dexterity (as Pepin himself now is) can succeed with. This nutritious meal likely cost around $5 to make and looks like it will comfortably feed four. This is why Pepin will always be my favorite celebrity chef: he knows that most of his viewers are experimenting every day with what they already have in their fridges and pantries, trying to stretch their budget, avoid waste, and make nutritious meals that are still a pleasure to cook and eat. The people who are eating lobster bisque and chateaubriand every day aren't watching his shows, and he's not making his content for them.

Wonderful. Can also be done with finely shredded cabbage. Lots of black pepper. Supreme side dish with any meat.

@@kqed yes, it is easy... 2 cups white vinegar to 4 cups water. BOIL THIS BRINE AND POURR OVER SLICED IN HALF SPROUTS. TRY SOME SPICE. Dill seeds are good. Then refridgerate. .y cook book is coming out, entitled Kent Vogel's First Great Cookbook.

LOVE Jacque. But want to offer MY recipe. Cut brussels in half lengthwise. Boil until tender. Drain and Dry. Fry a pound or so of bacon until crisp. Remove bacon onto paper towel. Fry the cooked sprouts in the bacon fat until browned. Drain them. Place cut side face up on a baking tray. Put bacon pieces on top of the sprouts and some grated parmesan cheese. Put under broiler for a very short time. Serve. Amazing.

I would say with the calories and protein from the sausage and beans, this could easily be a main course with a starch on the side, or would happily pair as a side to a bit of roasted or grilled pork or chicken, etc. Something with a little sweetness to it would be nice, maybe with a balsamic or honey glaze?
