Interestingly enough, the fact that you aren't able to bounce on the edge of a slime block is a Java Minecraft bug reported at MC-1133. This is not an issue in Bedrock Minecraft. Also, sprinting does not completely stop when hitting a wall in Bedrock either; it's a bit more complicated.

So for the slime block jumps the way to do it is once you hit the block let go of the “w” or forward key, if I remember correctly that’s how you do it, then you can press the forward key again after that.
