Ingredients for 4 servings:
1 cup pinto or red beans
1 cup chickpeas
1 cup lentils
0.5 cup rice
Herbs for the soup include chives, cilantro, dill, and spinach, totaling 1 kilogram.
4 onions
10 cloves of garlic
2 tablespoons dried mint
1 cup whey (kashk)
1 cup yogurt
Noodles (as needed)
Salt, Turmeric and black pepper (to taste)
Turmeric and oil (as needed)
Preparation Method:
From the day before, soak the chickpeas and beans to remove their bloating properties. Then, cook each of them separately until fully done.
Soak the lentils and broken rice for one hour before cooking.
In a pot, pour some water and add the lentils and broken rice.
Dice 3 of the onions and fry them until they caramelize slightly. Add some salt, black pepper, and turmeric, stir, and then add this mixture to the pot.
Once the ingredients in the pot are well-cooked and slightly thickened, add the pre-cooked chickpeas and beans. Next, add the finely chopped herbs, which include chives, cilantro, dill, and spinach, to the mixture.
In the next step, mix the whey (kashk) and yogurt with a small amount of water and add it to the ingredients. Then, add the noodles to the pot and let everything cook thoroughly until the mixture thickens.
Finally, after all the ingredients are fully cooked and the soup reaches the desired consistency, finely dice the garlic cloves, sauté them, and add a bit of turmeric, pepper, and dried mint. Stir-fry this briefly and add it to the main pot. Let the flavors infuse for about 5 minutes.
