Koko Sabzi is an authentic Iranian dish and a staple of Middle Eastern cuisine. It’s a perfect representation of the region’s rich culinary traditions, combining fresh herbs, eggs, and spices to create a meal that is both nutritious and full of flavor. The best part? It’s incredibly easy to prepare-simple ingredients, simple methods, and yet the taste is extraordinary.
Ingredients for 4 servings:
Fresh herbs (500g), including:
250g leek
100g parsley
50g cilantro
50g dill
50g green onions
Eggs: 5
Chopped walnuts: 3 tablespoons
Dried barberries: 2 tablespoons
Grated onion: 1
Crushed garlic: 4 cloves
Turmeric, curry powder, black pepper, and salt: as needed
Instructions:
Start by finely chopping all the herbs and placing them in a suitable bowl. Then, add the chopped walnuts and dried barberries to the herbs.
Next, press the grated onion slightly to release some of its juice, then add the strained onion to the mixture.
Now, add the spices to the ingredients to taste, and then add the eggs.
Mix everything well until the mixture is smooth and well combined.
Next, heat a pan over medium heat and add a generous amount of olive oil, butter, or any oil of your choice, and let it heat up.
Once the oil is hot, pour the entire mixture into the pan and flatten the surface.
Fry on medium-high heat for about 3 minutes until the texture firms up, then reduce the heat and let it cook slowly. Be sure to cover the pan so it cooks thoroughly.
After about 15 minutes, carefully flip the mixture in the pan so the other side can brown as well. After 10 more minutes, remove from heat and serve.
Now you can enjoy the amazing flavor of this dish.
This dish can be served with rice, bread, or even on its own. It's incredibly delicious and satisfying.
