Ingredients:
Flour - 1 kg. / 35 oz.
Yeast for bread - 25 grams. / 0.90 oz.
Milk - 400 ml. / 2 cups.
Yogurt - 120 grams. / 4 oz.
Eggs - 3 pcs.
Yolks - 2 pcs.
Sugar - 250 grams. / 9 oz.
Rum - 50 ml.
Oil - 150 grams. / 5 oz.
Peel of 1 orange.
Vanilla - 10 ml.
Salt - 1 pinch.
Chocolate spread.
Method of preparation:
First we activate the bread yeast.
Pour the warmed milk into a bowl.
Add the yeast, 1 tablespoon of sugar and 100 grams / 3.50 oz. of flour.
Mix well and let it triple in volume for about 30 minutes.
In another bowl, sift the remaining flour, which we previously sifted twice.
Add the remaining sugar and salt to the flour.
Stir to mix well.
Then we add the yogurt, 70 grams / 3 oz. of butter at room temperature, the eggs and rum.
When the yeast is activated, add it to the bowl with the rest of the ingredients.
We mix well.
Cover the bowl and let it triple in volume for 1 hour.
Add the vanilla and the finely grated orange peel.
We make a well of a little flour on the work table.
Pour the dough into the well and knead by hand, kneading vigorously and for a long time.
Cover the dough and let it rise again for 30 minutes.
After that, we start adding the remaining oil, which is at room temperature.
Again we knead long and vigorously.
Let the dough rest for 10 minutes.
I divide it into 3 parts.
We roll each part into a rectangular shape.
Spread liberally with liquid chocolate and roll up.
Then we braid the three rolls.
Place the kozunaka in a tray covered with baking paper.
We cover it and let it rise for 30 minutes.
Then we spread it with the egg yolks, beaten with 10 grams / 0.35 oz. of butter at room temperature.
Sprinkle with sugar and sliced almonds.
Bake in a preheated oven at 180°C / 356°F for 50 minutes.
