Have you ever tried a shrimp pie? Me either. Let's make one from an 1823 recipe (or receipts as they used to be called) from American Domestic Cookery and see if it's edible! Hold my hand? I'm nervous.

It comes from experience that's all I can say. You can tell roughly how hot an oven is based off of how many coals are on the oven. I can't get it 100% but within 50 degrees or so usually.

Was preserving shrimp in brine really a thing? Missouri is a long way from any coast and given travel times and lack of reliable refrigeration in the 1820s, I can’t imagine any way of keeping them edible unless there was some sort of pickling process in use.
