I like to think that characters are mostly stuck with their personality traits while corrupted, that is why Fluttershy remains as shy and meek even while corrupted, all I'm wondering is how she would corrupt others into the darkness while she remains all scared and meek.

Holy smokes, I'm finally relieved someone has managed to see what I was going for!!! I feel like Fluttershy is the only one would be able to keep her personality in check since her soul genuinely too pure to keep the corruption from turning her into a mindless creature. I noticed that in DTD and thought it would work here!

I always did have this headcannon where those corrupted would still maintain their personalities while corrupted, so they wouldn't be as mindless as they are, like they could be creative with their attacks and mechanics and all that. For Fluttershy who is maintaining her shy and sensitive personality while corrupted, I feel like her own fear could cause others to be corrupted, usually through her animals that protect her, which are also protected, or leaving a trail of the darkness behind.

I doubt this contributes anything to this conversation, but my personal headcanon for infected or "pibbified" characters is that when a character gets caught by the darkness and turned, it essentially erases everything that makes them, well, "them." However, it does spare some things... And said "things" are traits that make them dangerous and formidable in the first place, twisted by the darkness to cause terror and destruction against all noninfected individuals. A tragic irony, as it were. An additional fact of my headcanon, which could be actual canon judging from what I've heard, is that infected characters can still "speak," but their voices are distorted in various ways, and the things they say are things they said before in previous conversations. They even react to individuals they knew back when they weren't infected, like they remember them. consistently calling out their names, even when attacking. These haunting fragments of what they once were further highlight their drastic change and the tragedy behind their lost humanity. Or, well, I guess in this case they're "pony-amity?" "equestrianamity?" "equestrianism?" Whatever. The point is, it's my personal headcanon on the infected, and it's supposed to highlight the dangerous parts about the pibby-infected and their conspicuous tragic reminders of who they were and what the darkness took away.
