Duck fat is still my own, forget the hog fat , just give me that duck and it will make the meal 3 times better, but that's OK I just got home at 7 PM and what you are cooking right now looks out of this world for me, so keep them coming young man, I love it.

I've always put onion, sage and black/red peppers with just a bit of homemade bbq sauce anytime I've prepared racoon so the meat is almost sausage already. The only thing different is I don't put the bbq sauce if I'ma make milk gravy for biscuits and hardly ever use all the meat unless I'm having a big crowd. I don't like to waste valuable racoon meat.😂

👍This was a sure thing at my house when I was growing up !! And sometimes when we had just a few eggs (but not enough for everybody) mama scrambled eggs right after she cooked the sausage. pulled it all out, then made gravy and put it all back together. If you ain’t had sausage, gravy, and biscuits you’re missing out on some GOOD GRAZIN

I make my own when we are at the camp I make it for a crowd I use some bacon and sausage wild hog or deer once its browned I add some seasoning blend of onions peppers and celery along with a bit of garlic. when thats coked down I add some butter and flour cook that ba while then add my milk and either K fred or tonys to taste, its always a big hit and gone quick. Really cool that you can produce vids on the tugboat. I am retired now but the 2 assholes I worked under were fing control freak micro managers. I feel like I always reference Iowa when I comment (sorry ya’ll) but we have a company in the Midwest called Farmland. They make bacon sausage. Which is just what it sounds like…. they grind bacon into their sausage mix and let me tell you! It makes the best ANYTHING you put sausage in. Gravy, breakfast burritos, breakfast sandwiches, casseroles, holiday sausage dressing. Now you can replicate this at home. Buy a package of bacon that has more lean than fat, open it and leaving it as it comes out of the package. Slice narrow strips from the stacked bacon and then lay them out on a cookie sheet, still stacked and freeze SOLID. Once you have them frozen break out your food processor and blitz them in small batches, like 1/4 of the package at a time. Now mix in with your sausage of choice and cook away! If you this with chilled bacon, you end up with bacon paste (ask me how I know). Now this end result does have its own uses. I can share that in another Comment if anyone is interested. And the one spice beyond salt and pepper that will boost your sausage gravy? Ground sage! Another delicious looking video, Ian! Thank you! Hubby and I will be in the Pensacola/Naples area in early to mid March and have talked about checking out the St. John’s river. Keep em coming!!!🦌

Looks good! I use the drop biscuit recipe from America's test kitchen and add some four cheese shredded cheese and make some sausage patties on the side. Eggs and hash brown never hurt anyone either!!
