I actually grew up on a ranch where we butchered our own beef regularly. I also grew up fishing a lot. The saltwater is going to create rust much faster than fresh water or saliva. I would also encourage you to watch a couple videos on using a sharpening stone. I haven't seen your technique used before so maybe I'm the inexperienced one here but it wouldn't hurt to watch a few butchers online do it. I love following your videos and I would love to surprise my wife with a sailing trip one day. Let me know if you ever need a couple extra deck hands for a week or two;)

Speaking as an old butcher who has worn out dozens of blades, nothing wrong with a bit of rust that a rub with steel wool wouldn't fix. Best advice i can give you riles is slow weighted strokes on the stone for best results and always use steel rather than a stone. When you steel the blade, no more than a dozen rubs are needed to get it razor sharp. You should be able to get 20-30 honing sessions on a medium steel before a rub on the stone is required. Stone = 400 grit, steel = 1200 grit. The difference a steel makes when filleting fish will astound you.

Knife sharpening 101. Place stone on solid surface coarse side up, wet or lube stone, grab knife base with right hand and near tip with left, draw (sliding to move from base to tip whilst moving up the stone) holding the knife at the edge angle (push knife away from you), repeat 3-4 times, reverse grip to get other side. Then hone edge by turning stone over and repeat on fine side. Always push edge into stone. PS a filet knife has a flatter geometry than a kitchen knife and should be flatter to the stone. Have fun!

@@gimiesome Well... not to pick on Riley but what he was doing wasn't sharpening. I have no idea what to call it (it made my eyes hurt). Either pulling or pushing, I use "kind of" a slicing motion. The key to a good edge is more about blade to stone angle than how it's moved across the stone. The idea is to pull, push, whatever, a burr on the edge (very thin and hard to feel) then polish the burr off with something like a hard arkansas stone. But yeah, circular works...

Oxidation is what rusts the knife. That's exposure to air. Put a little oil of some kind on and you'll be tip top. Salt water is a very good conductor which enables the ionization of the oxygen into the iron in the knife. Block the oxygen you'll have a nice knife. Put oil on it, it's not the salt water, it's the air. Science and stuff.

How could the word “mocha” be skewed by an Australian accent? My goodness. Mocha. Best life’s motto in SLV 178: "Judge not a fisherman by the fish he gets but by the fish he chooses not to shoot.” Outstanding picnic lunch. Gorgeous colours in it. That crab looks delicious.
