A very simple and delicious recipe for fried mushrooms in cream cheese sauce with tomatoes.

Ingredients:
Vegetable oil
Mushrooms - 400 g.
Sauté until mushrooms are browned, about 5 to 7 minutes.
Tomatoes - 150 g.
Garlic - 1-2 cloves
Salt
Black pepper
Cream - 200 g.
spinach
Mozzarella - 50g.
Parsley
Sprinkle the mozzarella over the mushrooms and cook until the cheese is melted (about 2-4 minutes). Sprinkle with herbs.

A tasty dish. But lacking as a main dish. Maybe for a starter or a tapas dish. It would go well with Boston new potatoes. Or toasted sour dough, topped with creamy mushrooms. Never use cheap unhealthy vegetable oil. Use cold pressed extra virgin olive oil.

I would encourage you to go for a drive to a vegetable oil factory.. don’t even have to go in - just read the warning signs on the fence about the chemicals being used… you won’t ever touch the stuff again..
