The absolutely best way of cleaning greens straight from the garden I’ve found over the years is get a large bowl and fill with your greens sprinkled a large tablespoon of sea salt on top and cover with water for ½ hour or even overnight if you can’t get to it, it will stay bright and fresh in the water. Rinse and dry in a salad spinner. I pick for the week and store dried salad leaves in a ziplock bag. It keeps really well for the week. The salt kills the bugs and they float down to the bottom of your bowl.

Becky, for the grill this summer, try a Moroccan-inspired meal. Grill bone-in chicken, seasoned with a spice mix of salt, cumin, turmeric, cinnamon, and hot paprika. Throw on sliced eggplant, zucchini, red bell pepper and onion (or any fresh veg you like), tossed with olive oil, S&P, and oregano. Bring homemade chicken stock to a simmer to cook couscous. And throw in dried fruit (raisins, diced prunes or apricots) and toasted, slivered almonds when you fluff it with a fork. Put it all on a platter, and drizzle it with warmed honey. Trust me, it sounds unusual, but it's a crowd favorite!

Bone in chicken is the way to go. Love BBQ on with the skin on. It get the skin so crisp. I only put the BBQ sauce on the chicken for the last few minutes it's grilling. Best way to clean BBQ sauce off the grill burn it off so it's easier to scrape clean.

Frog Mats are a game changer for grilling things that don’t like to not fall between the grates, and will still give you grill marks through the Frog Mat! Onions, peppers, Brussels sprouts, pineapple, pizzas. And corn in the husks and silks, soaked in a bucket of water for a half hour or so, then grill them in the husks and the water steams the corn and the husks and silks come right off!

Hi Becky. Oh my goodness. In my experience, everything went on the grill in the summer. All kinds of vegetables, mixed grill of meats, clams, oysters for a party. Peaches halved with grilled with honey and served with ice cream. Put a whole eggplant on the grill. Poke some holes with a fork in it so it doesn’t explode. Scoop it out and serve with sour cream or whipped feta or slice it and grill it with olive oil, s&p, garlic, parsley. You’ll figure it out. You’re already there. Such a joy to watch.

Try salting the zucchini before grilling to start the sweating process, then grill. When done place them on a dish and drizzle olive oil and balsamic vinegar. Let marinade on the counter while you cook the meat or whatever main dish you’ll be having. So good the next day and something you can add to a pasta salad with fresh peas, roasted corn (on the bbq) and leftover steak, chicken or salmon (done them all and all delicious, plus using up those leftovers). We do the exact thing you’ve been doing with your grill when finish. Turn on high and let everything burn off, scrape and done.

I was going to recommend the same. Onion to clean grill. We grill skirt steak. We marinate it for few hours with Goya Mojo Crillo marinade (you can make your own). The longer you marinate the more tender the meat. Use your burner to make baked beans. We do baked drunken beans. You add fresh pico de gallo (jalapeños, cilantro, tomatoes, onions, garlic and a splash of lemon juice), bacon and one can of your favorite beer. Mexican corn. Grill corn on the cob add butter, mayo, cotija cheese, cayenne or chipotle ground pepper, and a squeeze of lemon.

Cabbage steaks are fantastic grilled! I would recommend getting a grill sheet since cabbage can get kinda messy and set it on the grill when you light it. Slice cabbage into "steaks" about 3/4" to 1" thick and cut out the core part. Brush with a neutral oil and season with salt, pepper and paprika or red pepper flakes on both sides. Grill on med-high for about 4-8 minutes per side. You can add balsamic vinegar or everything bagel seasoning before grilling also, so good. Top with butter for a simple side dish or you can add bacon bits, parmesan, blue cheese, green onion, or parsley.

One of my favorite grill recipes: In foil sheet (good sized so you can close it up) put a few slices of butter, onion, slice of uncooked bacon, Cabbage wedge (not too big - so it cooks faster) & season salt. Now fold up edges to make it a foil pouch, then wrap again if needed with more foil so it won’t leak on grill. We usually make 5 or 6 of these. Put the cabbage foil pouches on grill & cook until done to your liking! The more cabbage you put in them the longer they take. I prefer my cabbage well cooked with burnt spots when grilling these. It’s so dang good!

Korean BBQ Galbi and bulgogi are some of my favorite grilled meats. Especially if you season the hot grill by scrubbing it with half an onion before grilling the marinated meat. Fire roasting eggplant for baba ganouche is the way to go, though I know you already enjoy salsa. In Italy I would buy my Pizza dough from the baker and make grilled pizza and calzones! I reccomend a flat top grill grate to add to your grill. My husband just refurbed my grill with new burners and grates. I have 2/3 grates and 1/3 flat top. I saved the third grate and can switch it out if I need grates for a crowd. Also you can usually buy a rotisserie motor for your grill as well. Lots of fun stuff. Wood skewers work really well on many thing to keep foods from falling through and together- sausage, shrimp, veg of all kinds.

You need to call your mom for some tips. That big grill for two hamburgers and two slices of onion made me cry. Leftovers from the grill are so much better than leftovers from food made on your stove top. They taste better reheated than the stuff cooked indoors. Try to incorporate things so you can have extras so Josh can take them to work for lunch. You go girl you got this 👍🏼P.S. I have 2 tips for you. 1) Hang a sign to remind you to shut off your propane. It will slow leak until it's gone. 2) Have 2 filled Propane tanks so you don't run out of fuel in the middle of a cook out or have to run for a refill before you have a big cook out.😊

I shopped for a salad spinner for a long time on Amazon, they were all so expensive and I ended up finding the same one at Costco for $10.99! Absolutely love it!

Hey Becky! I just want to let you know you are such a wonderful inspiration. I was feeling so overwhelmed starting my homesteading journey when I found your page. And now I've been canning and have a small garden, and 5 chickens! Your videos are always so real and you're not afraid to show the struggle, which was so inspiring. Thank you for sharing your journey with us! Can't wait to see more! 😁

It's fun to watch you and Josh get your new house ready. For oiling and seasoning veggies for roasting or grilling, toss everything in a gallon baggie. it takes no time at all to coat the veggies, and you use less oil. Your hands stay clean too! For cleaning the grill, you really can't beat a wire brush. Before you put items on the hot grill, put some oil on a folded paper towel. Then wipe the grill with the towel using tongs. Less stick and mess to clean afterward.

We always liked grilled pineapple., zucchini and yellow squash. Great sides for just about anything we wanted to throw in in summer. We’d do skewers with peppers onions tomatoes mushrooms summers squashes and marinated meats or shrimp. Real treat sometimes.

Hi! My family uses either a half a lemon, lime orange or onion to clean the grill before cooking this cleans it and seasons it at the same time. ☺️

Hi Becky, I am new to your channel and I am LOVING it! I am from Scotland but now live in New Zealand, and being in the middle of winter watching you in summer has been great. I use my side burner on my BBQ to make batches of soup and curry sauce etc during the summer to save heating up the kitchen, I keep them in the freezer for the winter months. I am yearning for fresh grilled veg and prawns so decided to brave the winter (not as cold as Scotland) weather and make pork and zucchini for dinner tonight! Thank you for sharing your life with us, looking forward to many more videos like this.

Hi Becky! I use a Weber too and I am a loyal user of the card that came with it showing cook times for different meats. It is very accurate and helpful when you’re new to grilling.

I don't have a grill, but my parents love to grill and use a copper grill mat (flexible...almost like a silicone/Silpat baking mat) to keep veggies, shrimp, etc from falling through the grates. It's super easy to clean off in the sink and saves a ton of time and frustration :) Happy grilling!!

I always clean the grill as soon as I’m finished cooking. Makes it easier for clean up while grill is still warm and you don’t get build up on burners.😻🌺🇨🇦

Grilled eggplant is my absolute favorite summer treat! Remove the skins and cut into rounds, season with salt & pepper, and douse with a LOT of olive oil. Grill until tender and a little caramelized. It’s delish!

I love grilled or roasted corn on the cob. Just rub with a little olive oil and sprinkle on sat and pepper. Just grill until starting to brown a little. No butter needed as the olive oil is enough.. love your channel and have been watching for a while. Love all you freezer meals and your gardening. So great that you are sharing the progress on the new house, and what a beautiful view you have to sit and eat your meals and relax. Thank you for sharing ❤️❤️❤️

To clean your grill, you can also use a half onion on the preheated surface. It cleans the surface well and adds a subtle flavor to whatever you cook.

From Australia, our Weber gets used six days a week year around. If I plan correctly, I find I can harvest my herbs and kale, wash thoroughly then salad spin dry, the put in an aluminium baking tray, and after the grill has been used, put the greens in the Weber to dry out and make dried greens using the residual heat, works best in winter when there are fewer insects in the Italian flat-leaf parsley. Love your vlog Becky, you are really switched on!

That set if grill baskets you saw at Costco, for veggies and especially the onions! I love mine, it's a game changer!

Elonda, any pointers on how to actually use the baskets in the grill?
@elondamontanye57062 жыл бұрын
I used mine to make fajita veggies. I used grilling non-stick spray, put my veggies on the tray, which I put on the grill first, got it hot, then added my veggies. I sauteed on the basket, basically. Cooked chicken thighs and shrimp on grill, then added to other preheated grill pan, to serve warm.

Recipes: I like to make breakfast on the grill with a cast iron griddle heated for frying eggs and bacon wrapped in parchment paper and then wrapped in foil to prevent the paper from burning AND to contain the mess. Also, I'll reserve the bacon grease for future use. Pizza and calzones on the grill rocks. Lasagna in a casserole pan on the grill is better than heating up an oven indoors, same for Mac n cheese.

I am intrigued by your comment…. Do you mean you put the bacon and eggs in the parchment paper and foil itself? Are you baking them like a foil dinner? Or do you mean you cook the eggs on the griddle and wrap the bacon separately and sort of bake it on the griddle! Thanks- I camp a lot and am always looking for new strategies Thanks!

I always pre cook the brats in beer and onions on the stovetop then grill out. That way the brats don’t cook so much on the outside and are possibly uncooked in the middle. They are so good! Have fun with the new grill and of course the new house!🌭🏠

Hobo packages. Cube potatoes, carrots and onions. Season with salt and pepper and toss together. Divide the ingredients into individual foil packets topping your vegetables with a pat of butter. Seal up the packets and put them on the top grill shelf. (If you put them on the bottom grill shelf they'll burn before they are cooked) close the grill and cook for about 30-45 minutes they're done when vegetables are fork tender.

Becky, we went shopping last night and I told hubby that we are not purchasing grated cheese any more, I am going to grate blocks of cheese after I watched your many videos talking about what they put on grated cheese to stop it clumping. He was all for it... I'm excited to make this little change. I also purchased some apple sauce, never had it before so I can put in my next baked oatmeal. I love watching your videos, I'm learning so much.

I recently started playing on our grill. I LOVE grilled veggies! And my husband doesn't really, so he never grills them. A really wonderful marinade I did recently (sorry, I don't recall where I got the recipe): 1/4c (42.5ml) Lemon Juice, 1/6C. (42.5ml EVOO, 1 tsp white sugar, 1 minced garlic clove, 1/4 tsp Salt & Pepper, 1/4 tsp basil, parley, oregano & thyme, 1/4 tsp chili flakes if you like spice. Marinate for a couple of hours & grill. It was delicious. Fabulous for salads the next day (I think I did Zucchini, red pepper and onion). I've been sous-viding my chicken (in marinade) to 158degrees F (I am a microbiologist, I take no chances on food pathogens). I then sear both sides on the grill to 165 F. My current favorite marinade for chicken is: 2# chicken, 1/3 - 1/2 C EVOO, 3 TBS fresh lemon juice, 3 TBS Soy sauce, 2 TBS Balsamic vinegar, 1/4 C brown sugar, 1 TBS Worcestershire sauce, 3 cloves minced garlic (or 1/2 tsp powder), 1.5 tsp salt, 1 tsp pepper. I also threw in some red onions. I loved the sweet/ sour taste of it, though, it was a bit much soy sauce for me. After I marinade/ sous vide it, I cooked the marinade into a lovely sauce.

Grilling side dish suggestion -- Romaine Hearts sliced lengthwise, in half, sprinkle garlic between the leaves and drizzle olive oil on cut side - then put cutside down on the grill for a couple minutes to get some char. Remove and eat as a warm salad on the side! (Don't have to chop it up, just take bites as each should still be intact:) Edit: sprinkle with salt after too

Hi Becky, I absolutely love, love, love watching your videos. You are such an inspiration to me. I used to can a lot of things when I was in my 20-30s. Then for some reason I stopped. You have inspired me to start again, I can't get enough of your videos. The only freezer meals that I have done, is hamburgers and meatballs. They freeze so well and you can make a ton at once. I usually do a large bowl of thawed burger and add in whatever I feel like. Generally onions(minced), garlic, eggs, oatmeal, salt, pepper, and spices. Then after it's all mixed up, I use a fork and a Canning ring. I press the meat tightly into the ring, leveling with the top, and you get a perfect burger. If you use large mouth, they are bigger and gem rings are fatter. Then I push them out onto a plate and freeze in a container, with waxed paper between the layers. You can take out one or two or cook them all. Thought I would pass that on. For the meatballs, I love cooking them for about 20min in the oven and add to spaghetti, or sweet and sour meatballs.
