Here’s what I do to preserve my cucumbers. Place thinly sliced onions and cucumbers into jars of white or apple cider vinegar. Refrigerate. They will last much longer. Great for salads and sandwiches.

I just found your channel this week. You are such an inspiration to me! We live at the top of 2 very steep hills in the Adirondack mtns of New York. But we dont have to climb 500 steps to get to the front door! 🙂 Just down a dirt & gravel driveway. We have a large veg garden , many flowering trees, & loads of raspberry bushes. @ 24:00 - Love this part of the vlog as I was the only grandchild that sat with our Nonna and looked at family pictures with her! She would speak to me in Italian and tell me the same stories over and over. I loved the picture in front of the church in Liguria of Nonno and Nonna on the day they were married with the whole village in attendance. So when I turned 70, being the only cousin who knew the names and stories of the pictures, I wrote a PowerPoint “show”. Take time to hear the stories now before they are lost.

We use pectin here in the U.S. for making quick setting jam. It is a powdered mixture. There are a couple of brands. I basically make it the same way you do, but then boil the jars in a water bath canner. We put a flat lid on and the water bath seals the lids. I am going to get some apricots today from a neglected tree I spotted where they are just letting them fall on the ground. Love apricot jam. You are my favorite vlog on KZbin.

There are several fruits that are already high in pectin and do not need pectin to gel. Plums are one of the fruits that are highest in pectin. You can actually skip the pectin entirely. You just need sugar, fruit, and lemon juice. Generally fruits with pits (remember "P" for pectin) are high in pectin and need none for jamming. This includes plums, apricots, peaches, as well as several others. Your garden harvest is incredible! Thank you for another chapter in your lovely Positano life. You always make my day. LUCA YOUR GARDENING SKILLS ARE SOOO EXCEPTIONAL!!! NICE TO SEE YOU TEACHING NIKKI HOW TO TIE THE ONIONS. LOL!!!😁🤗🌈People dont realize how hard you work in the garden. But there is a lovely peace and accomplishment that comes with the skills of gardening. I used to tend five acres of orchard and three rock gardens of assorted vegetables. I had it set up on gravitational feed flow systems. So much easier. I had no electricity but ran everything off of generator, solar pump in well to high drum barrels over run to huge fish pond and wind generator and deep marine cycle batteries to charge small solar system. I had to mow five acres five to six times per year with small lawn mower and I'm a woman....so it can be done. I pretty much did most of it myself!!! You are working 24/7. Lol!!!😁 Later on I had to move to town with electricity as gas prices too exorbitant. It's alot easier to live in town, but I miss my organic food!!! I used absolutely no pesticides and fed it all with fresh well water. The food was absolutely delectable and delicious. Be encouraged in the fruits of your labor!!! Have a wonderful day!!! Kudos to you guys, I do not think many people know how much work it takes to have all these vegetables and fruits. I had huge vegetable gardens on various farms I owned, it is back breaking work. It is basically 5 times the work: #1 Prepare the beds digging over.#2 Plant in beds or raise seedlings. #3 Remove weeds, tie up the vegetables/fruit. #4 Harvest and prep the crops. #5 Remove old dead plants clean up.

Appreciate the story about the anchor system in the area being replaced. As a former US Marine, it was nice to hear them acknowledge the new methods are derived from USMC. Also, as one who works from a laptop all day, I also like Luca find comfort and escape in my garden in early mornings or after work. It's in our blood as Italians and generations of farmers and herders. We all have those old photos too of generations past, brings back so many memories. Lovely as always..thank you 🤗. Thank you for the underwater swimming shots.. I love the sound underwater and miss it so much. Roll on 2022 when hopefully the pandemic is better undercontrol and we can finally travel.. I want to go home see family and friends and the sea. I just put boiling water in the jars.. Screw the lids on and turn upside down. I only open and empty them when I am ready to put the jam in. Then again put upside down for 5mins with jam in..then turn the right way around to cool and solidify. Never had jams go bad. We have the gelling jam sachets in Germany.. 50;50 fruit:sugar 66:33 fruit;sugar 75;25 fruit;sugar I use the 75% fruit... I don't like sweet jam. Even with the sachets I usually add some lemon juice. So maybe import from Germany (like your dad did for your tea). It will save you extra postal costs because it is EU to EU! In Germany we can buy the non-Sulphur dioxide treated dried apricots.. We prefer those because they have a more caramelized taste.
