A Yummy One Pan Dinner

One Pan Beef and Potato Dinner
My family ate all of this up immediately!
Ingredients:
4 tablespoons olive oil
2 tsp salt
2 tsp pepper
1 tsp crushed rosemary
1 tsp thyme
1/2 tsp crushed red pepper flakes
3 potatoes pealed and sliced into thin rounds
1/2 onion chopped
1 clove garlic chopped
1 cup white mushroom slices
1 LB ground beef-lean
1 cup tomato sauce (I used leftover pizza sauce)
4 cups shredded mozzarella and cheddar cheese
Directions
Preheat oven 375 degrees F
oil a large baking pan with 2 tablespoons olive oil
spread evenly 2 cups of cheese on oil in baking pan
layer all the potatoes over the cheese layer.
sprinkle the potatoes with 2 tablespoons of olive oil
use a brush to cover the potatoes with the oil
sprinkle potatoes with 1 tsp salt and 1 tsp of pepper
sprinkle potatoes with rosemary, thyme and crushed red pepper
bake potatoes for 30 minutes uncovered in preheated oven
While potatoes are baking, brown ground beef in large frying pan over medium heat. Salt and pepper the beef while it is cooking.
Add mushrooms to cooked beef and sauté 5 more minutes.
Add onions to beef and sauté another few minutes.
Add garlic and tomato sauce to the beef mixture, sauté a few more minutes.
Remove potatoes from the oven and layer beef mixture over the potatoes evenly.
Sprinkle remaining cheese over the beef and potatoes.
Bake uncovered another 15 minutes, slice and serve!
