Full written recipes:
Unstuffed pepper skillet
1 package of beef patties
1 bag of frozen pepper stir fry
2 cups of beef broth
1 cup of white rice
1 cup of pasta sauce of choice
1 can of diced tomatoes
Shredded mozzarella cheese
Serves 4
Brown and crumble beef patties, rinse and drain then fry together with thawed and drained pepper stir fry. Add 1 cup of white rice and toast for 3 to 5 minutes.
Add 1 cups of beef broth, drained diced tomatoes, and 1 cup of pasta sauce. Stir and bring to a boil, reduce heat to low cover and simmer for 15 to 20 minutes. Turn off heat and allow to rest undisturbed for 15 to 20 additional minutes. Top with cheese and cover until cheese has melted.
Ramen stir fry with potstickers
2 bags of pork potstickers
5 pack of ramen (any flavor) I used 3 blocks
Stir fry vegetable mix
Stir fry seasoning (or mix equal parts soy sauce and brown sugar)
Serves 4
Fry potstickers per package instructions. Add 1 cup of water to skillet for each pack of ramen being cooked. Boil ramen until tender breaking apart noodles as you go. Drain noodles and truth to skillet with thawed and drained vegetables, add in stir fry sauce and heat through while coating with sauce.
Taco pasta
2 cans of chili
1 can of enchilada sauce
1 can diced tomatoes and green chilis
Pasta of choice
Packet of taco seasoning
2 cups of water or 2 cups or leftover broth
Cheddar cheese
Add all ingredients into skillet besides pasta and cheese. Bring to a boil then add 3 1/2 cups of pasta. Return to a boil then cover and simmer until pasta is cooked (approximately 15 minutes) stop and stir every 3 to 5 minutes so nothing sticks to the bottom. Stir in cheese and serve.
Breakfast skillet
2 cans of diced potatoes
Sausage
Bacon
1 dozen eggs
Cheddar cheese
Seasonings of choice
Chop bacon into small pieces, fry bacon and sausage together until crisp. Drain potatoes and fry in drippings seasoning to taste. Fry until crispy.
Add back in sausage and bacon and reduce heat to low, crack in 8 to 12 eggs but do not stir. Cover and cook on low until eggs are set, add cheese and serve.

I'd use the extra water from cooking the ramen noodles to make the stir fry sauce. The extra starch might help it be a little saucier. Also, soft-boiled eggs would be a good protein replacement if someone can't get or doesn't want the potstickers.

I enjoy and appreciate your recipes. I'm early 50's, lived with my widowed mom (77) and our cousin (64). Mom did all the cooking; she passed three years ago. Our cousin stayed living with me, but doesn't cook, so I assumed that duty. In learning to budget economize, I've found that many grocery stores have markdown sections of baked goods, canned/dry goods, even dairy, meats & seafood. In my experience, discount selections are best in the morning, before lunchtime (and definitely before evening shoppers get all of whats left). Hope this helps someone too. Thanks. ❤️🙏

This is definitely my kind of meal making, I love it. One thing I like to do whenv using canned sauces is to pour the broth or water into the can of sauce after putting it in the skillet, swirl it around to pick up the last of the sauce and then pour the rest into the skillet. That way you can make sure and use every last bit in the can. I love this video ❤

I have got to try these skillet meals. They all look so good, and easy, plus I'm running over to the Dollar Tree on Monday. I don't know if you do this, but whenever I have something that's a little or a lot loose or runny, I like to throw in a couple tablespoons of minute rice. It absorbs the extra liquid without over cooking the noodles or whatever, since it cooks in like two minutes. It's a great way to thicken up and extend a meal without really changing its flavor. Keep up the great work.

Howdy from Texas. Great video. As a single older disabled person living on a very tight budget. I really enjoy your meal concepts. I really liked the last dish you did with the canned potatoes. But I believe that I would have added a cup or so of those fried onions that come in those little containers. I'm assuming your dollar store carries them as the two major dollar stores near me do. But there is just something completely magical, taste wise, when you add fried onions to fried potatoes. I myself am a former chef and chef instructor. And I do pretty good as well with making pretty good meals with very simple and very cheap ingredients. But your videos have inspired me to go check out more of what items my local Dollar Generals and Family Dollar stores carry in the way of groceries. Currently I buy most of my groceries from my local Walmart superstore and my local H.E.B. grocery store. I almost always buy the store brand except when the name brand is cheaper. Which isn't often but occasionally it does happen. Like when I make a skillet of Beenie Weenies, using one can of Vienna sausages cut up into discs. And one can of Campbell's pork and beans. I add diced onions and seasonings like garlic and onion powder, smoked paprika, and usually a little ketchup and a capful of vinegar with a good sized pinch of brown sugar. It's a very filling and very cheap meal coming in at less than two dollars total. The can of Vienna sausages runs around eighty cents and the regular sized can of Campbell's Pork and Beans runs around ninety cents. ( No sales taxes on groceries here in Texas.) and you can also find all of these ingredients at most dollar stores. Even without the added onions and ketchup it's still a very tasty meal.

A potato trick you might like - when you want potatoes the next day, after dinner, rinse out the pot and fill it with water and put it back on the hot burner and toss in some whole potatoes to cook while you eat. After dinner, run cold water over them and stuff them in the fridge for tomorrow. Precooked potatoes and well soaked pot! The skins will slide right off of boiled taters. :)

@@mariekatherine5238 yes and no: best meals had veggies, and I tend to want to see any rice partner with a bean for complete protein. Overall she did keep track of the sodium--a big offender in pre-prep foods. Unfortunately compromises sometimes have to be made in order to make a filling meal that checks most of the boxes at a budget cost (retired home ec teacher here)

I think for the chili mac recipe, someone could use one of those Velveeta packets if their store doesn’t have a fridge section.

If you do not have a lid for a skillet, just use a sheet pan to cover and make sure to use a mitt or towel when removing to check on your food.

Another suggestion for bulking up that breakfast skillet.. I'd saute some of the pepper blend in with the potatoes for like an O'Brien type flavor and to add in another veggie..

I recommend keeping your pasta water from the ramen as the noodles continue to soak up moisture and you can add a little as you go. I add at least one of the ramen seasoning too and it is always good😊

I’m eligible but haven’t bothered applying for the very reason that SNAP pays for cheap, unhealthy foods and does nothing to support good nutrition. It’s total calories over proper nourishment. I have a severe soy allergy (life threatening), am allergic to msg, have hypertension and psoriatic arthritis. I can’t eat even one of these Dollar Tree meals.
