Mangoes are in season, and what better way to celebrate than by making a delicious homemade raw mango achaar! Which is why I present to you my homemade achaar recipe, which has been in my family for ages. ❤
Raw mangoes bring a unique, tangy flavor that pairs beautifully with various spices to create a mouthwatering achaar that you'll love. 😊
It's the perfect addition to dal and rice, or even parathas. Trust me, once you try it, you'll want to have it with every meal!
Aam ka Achaar
Ingredients:-
Raw mango (kairi)- 5 kgs
Fennel seeds (saunf) - 250gm
Fenugreek seeds (methi) - 250 gm
Kalonji seeds - 100 gm
Salt - ½ kg
Mustard oil- 2 kgs
Red chilli powder - 200 gm
Turmeric powder - 100 gm
Method:-
1. Wash the raw mangoes nicely pat make them dry.
2. In a big pot (handi), marinate mango pieces with half of the salt and turmeric powder and keep the handi in sunlight for a day.
3. On the second day, drain the excess water from the mango pieces. (This step helps in extending the shelf life of the pickle)
4. Now, add all the spices along with 1 kg of oil to the drained mango pieces and mix well to ensure all pieces are evenly coated.
5. Then keep the handi in sunlight for 2 days.
6. Now, transfer the pickle to a clean, dry jar and add the remaining mustard oil to the jar.
7. Seal the jar tightly and store it in a cool & dry place.
