@@zeena8955 rice flour. The above video uses glutinous rice flour which is sticky rice flour. However, if you can't get hold of it in the country you're in, try it with rice flour.

Oh! I made it today and left it to ferment .....I am still uncertain about it because I have a very bad spice tolerance and also I'm vegan so I added soy sauce instead of fish sauce......but let's see how it turns out for me!! Looking forward to it. Edit: oh my god guys you know what, try this damn thing.... it turned out amazing. I really liked it. For a little context, my family is always a little skeptic about foreign meals but they really liked it too they said they scented home in this recipe so i think you must try it !! I tried this recipe today for my very first kimchi and it was very tasty!!! Unfortunately it was not enough for my 2 kg of cabbage and other veggies, so I made the paste with all the ingredients for a second time. I recommend it! Thanks for sharing!

British man here,Recently I bought some kimchi from my local Asian shop,taste was OK,but not sure if the fermentation time was appropriated OK or not maybe has been prepared quickly I'm not sure, I thank you for sharing your video with us,will try to make my own kimchi with your sauce.

Homemade kimchi when done properly always tastes best. If you're going to buy ready made kimchi I recommend a brand called Bibigo if you can get it. A lady called Maangchi on KZbin has really good Korean recipes. Good luck :)

Just grind rice in a coffee grinder and use that. I've made lot's of kimchi using this method also the amount of garlic is way to much will destroy the taste.

You can use oyster sauce. Soy sauce is ok, but I found the fishyness actually adds a secret background "umami" flavor (hence the use of fish sauce or oyster sauce) that otherwise makes you feel that "something" is missing when just using soy sauce.

I would suggest 5 lbs or so of napa cabbage & maybe 1 to 2 cups each of other veggies such as shredded carrot & lo bok radish. :) I'm no expert but I love to make femented food & been on a kimchi kick lately.

Question. Can the Kim chi go straight to the fridge after putting together or does it have to start fermenting before going in the fridge.

You can store it for a week :) they said a month but i tried to store it for a month it dindt taste good after

You may leave it to ferment at room temperature for 3 days. After that, put it in the fridge. You can consume it up to few months. Best to eat it with rice or make fried rice with chicken or beef & eggs. Enjoy!

@@v_v9195 you can use left over rice, smashed and boiled in water to get a similar consistency. The glutenous rice flour makes a rice "porridge" that, when mixed with sugar, supposedly helps in the fermentation process (or so I heard, as I'm no chemist). =)

Korean spice flakes, I understand, called GOCHUGARU comes mild or hot. A brand recommended by one Korean food chef is BITGGALCHAN. Hope this helps.

add soy sauce to the liquid until it tastes as salty as fish sauce (meaning REALLY salty). if you don't want the sauce to discolour your dish, use sea salt instead of soy sauce
