Great video! Didn't know the Utility could do so much. There is one thing I'm struggling to understand, why are channels out of phase in this case? - "At 100S, only the side signal will be heard. The left and right channels will be 180 degrees out of phase with each other." Any suggested material for reading about this would be great!

Putting L + R out of phase is a way to create stereo width. Essentially going from 0 -100M sums the L+R channels together to mono, 0-100S removes all content that is similar from the sides leaving only out of phase material. That's how I perceive it. Not sure where there is anymore info about I will have a little dig around and let you know!
