Well but Garp would have never used attakcs like blue hole or galaxy impact on that battlefield even though he could have.. This Episode simply shows how powerfull these old guys still are and that you shuld never underestimate the veteran characters. Just think about what a character like Whitebeard would have done to Marineford alone ins just three or four attakcs if he wouldn´t have been that badly hurt and drugged as to his health. Or what Garp and Senghok would have been able to show as we still dont know their full power or strength and i am pretty sure that we will see their full strength yet. Especially the strength of Senghoku and SWORD combined with the frozen Garp

In a one vs one between Akainu and Kuzan, Akainu won in a few days. 10 days if I'm not mistaken while in a one on one between Old Garp and Kuzan, Old Garp will win in a few minutes so yes Old Garp was not joking when he said he can kill Akainu during marineford and Sengoku stopped him not because it will be problematic but because he knows old Garp can actually do it and it will definitely destroy the marines to the core.
