About the intellisense bug, I was even more angry than you when it happens. But I found that the bug seems caused by the dot. Typing the beginning or middle part of the function name without the dot works for me.

Type the beginning of the formula without the period, then select from the suggested formula list.

Unfortunately intellisense was added after Excel 2019 was released. It exists in Excel 2021 or Excel 365
