I think that’s a myth. The first few times I ate cilantro it tasted like soap to me too. I didn’t understand how someone could eat that. Now I love it and it doesn’t taste like soap to me at all. I just think it’s an acquired taste because it has a very unusual flavor and you need to get used to it.

@@CherryJuli it's actually true. I looked into it. My husband cannot stand cilantro. He has tried to desensitize himself or to change it but it is just a thing that he cannot change because it is in his genetic makeup.. he went through culinary school that way as well so he's somewhat knowledgeable about food.

Absolutely! It’s like washing a glass in soapy water and not rinsing it out completely then taking a sip of water from it. It’s awful and it stays in your mouth. It doesn’t go away

Cilantro, aka coriander to us Brits, is one of the most divisive herbs so having a chef say she's surprised someone didn't like it, makes no sense

I‘ve got it too but there is a workaround: if you cook, bake, grill or pan it long enough it will become edible and dried cilantro is a no brainer in most dishes

It’s a genetic things. Cilantro/coriander, tastes like soap to a good percentage of the world. Asian people have the highest rate at almost 20% of population. It’s how we process aldehydes with our taste receptors based on a specific gene

Cilantro tastes in fact like soap, because what gives Cilantro gives it´s taste is Aldehydes. Which is what is abundant in and gives Soap it´s distinctive smell and Taste.

It’s not that they “think” it tastes like soap. It’s genetic. They’re able to taste something that is proven to in fact taste like soap within the herb.

When I make fish tacos, I make a sauce for them with sour cream or crema, garlic, jalapeño, lime juice, and cilantro; the sauce is delicious because the flavors are balanced. But if the balance isn't there - if there's too much cilantro added, that's when it makes the whole dish taste like soap.

As far as I know it’s because the seeds contain little or none of the Aldehydes that give the leaves their soapy flavour. It’s also possible it’s because the seeds are dried. Drying can break down the Aldehydes, making the soapy component milder, where it can be masked by other stronger flavours. I find it’s mainly dishes made with fresh leaves that taste soapy to me, vs ones that are dried or where the leaves have been blitzed and cooked extensively (like in some jarred curry sauces).
