Ace next time you make the sauce First cook the fish, make sure you use plenty of olive oil, once the fish is done remove it, in the same pan add your shallots white wine, once the white wine is reduced by two thirds of the amount you started with and minced garlic (bottled minced is fine) and your butter, and a splash of ginger seasoning reduce ton your liking, don’t burn the garlic it will give your sauce a bottler taste, stir if needed, then add to the fish.

Just a tip with the beurre blanc Ace, it should be a lot lighter in coloue than that. Your sauce split but thats okay coz its your first time :) next time dont use a whisk, when you put the butter in the pan, just hold the handle of the pan and swirl it around, dont bother using any utensil to "stir" it

Hey ace, if it’s summer flounder your looking for, come up to New Jersey. We surprisingly actually have great fishing for fluke. I suggest coming in between Mid July and Late August and go out the Manasquan Inlet. You’ll have fun. I don’t live there but I also have heard Carolina also has great summer flounder fishing.

To make the sauce you were trying. Start with a bit of butter in the pan on low medium until melted if the butter begins to brown you are much too hot. Add shallots and cook until translucent. Butter in the pan should be a nice golden color. At this point you would add your liquids and cook off the alcohol. At this point it is advisable to remove from the heat completely. It's also best to use nice cold butter. This sauce is technically an emulsion so if it's too hot it will break. A good test for pan heat would be that you should be able to stand the heat of the sauce with the tip of your finger for about 3-5 seconds. Hope this helps. Great video!

The venomous fish is what’s called a leather jacket and if you get barbed it’s just as bad as a catfish. On the other hand, the mangrove snapper are IMO the most tasty inshore fish you can catch.

Yeah Ace you're right. Sauce is called "beurre blanc" which means "white butter". Used principally for fish recipe. I can teach you another sauce using shallots (échalottes in french) and vinegar. That one is made for oysters. In a bowl. Finely chop 3 shallots, add 5fl oz (15cl) of wine vinegar, add 1 spoon of sugar (optional). Stir for 30 seconds. let the sauce rest for 30 minutes in the fridge. Add a little spoon of sauce on each oyster. Sauce widely used by the seaside in western France. Peace :)
