To make Achari Chicken Biryani, you'll need:
Ingredients:
2 cups basmati rice
500g chicken pieces
3 tablespoons oil
1 onion, sliced
2 tomatoes, chopped
2 tablespoons yogurt
2 tablespoons achari masala (available in stores or homemade)
1 teaspoon ginger-garlic paste
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Rinse and soak the basmati rice in water for 30 minutes, then drain.
Heat oil in a large pan or pot. Add sliced onions and sauté until golden brown.
Add chicken pieces and cook until they are browned on all sides.
Stir in ginger-garlic paste and cook for a minute until fragrant.
Add chopped tomatoes and cook until they are soft and mushy.
Mix in yogurt, achari masala, and salt. Cook for a few minutes until the chicken is well coated with the spices.
In a separate pot, bring water to a boil and add the soaked rice. Cook until the rice is 70% done. Drain and set aside.
Layer the partially cooked rice over the chicken masala in the pot.
Cover and cook on low heat for 15-20 minutes until the rice is fully cooked and aromatic.
Garnish with fresh coriander leaves and serve hot with raita or salad.
