The Lord has blessed you Becky not only with a great harvest but with the sweetest parents! I came from a broken home and it was not fun or nurturing and I made a promise to myself that my marriage would be a life-long commitment. After 32 years we are still going strong and I believe is the foundation for great children. Great video! Now, I want a carrot!

I'm jealous. I have the opposite type of mom. She looks forward to my failures and never notices accomplishments. I am 66 yrs old and crave for her to be proud of me. She is 87 now and I have given up hope on her ever saying...."I'm proud of you."

I know you and Josh enjoy Mexican food. You said you don't enjoy canned carrots but do you like them pickled? Some Mexican food restaurants serve spicy pickled carrots with peppers. They're delicious and often I enjoy the carrots more than the main dish! Also, have you tried Copper Rounds? They're a salad type dish made with carrots and a tomato soup base dressing. Anyway, those are a couple of ideas for your carrots. I love the harvest videos with your parents! Great team! God bless.

Just before the carrots go bad, you can dice them up and freeze dry them to toss in soups and stews. Congrats on such an amazing harvest!!!

Yes! I freeze dried carrots, onions, and celery over the summer and keep a few containers on hand as soup starter.

Dehydrated carrots work beautifully in soups, stews, potpies, ect! And, of course, you could freeze dry them.

You can add some fine sand to your carrot seeds and this will help you to natually spread the seeds out a bit more so you don't need to thin them out so much. Hope you find this useful.

Becky, your carrot harvest looks amazing! If your winters get cold, you can easily store carrots in-ground for fresh eating. We pile about a foot of leaves on top of our carrots around the time it gets cold. This insulates the roots from the deepest frost and has the added benefit of feeding the soil for next year as it breaks down over the winter. Another benefit is that because they go through a frost, all the starches turn to sugar, so our carrots sweeten up the longer they stay in the ground. When we need more carrots, we wait for a sunny day and go out and dig what we need for the next few weeks. Usually we have carrots all the way up until April in our 6a zone.

In 5b, I've overwintered carrots. Although I usually can't pull them in the winter, they are easily pulled in the spring for fresh eating in spring months!

You can process the carrots 🥕 just like pumpkin puree or sweet potatoes and use them instead of those vegs. Like pumpkin pie or pumpkin rolls, sweet breads and muffins. The list goes on and on. I really enjoy seeing your mama and daddy helping you. What a blessing they are. My daddy passed away next month will be a year and he always came to help me do anything I wanted so it blesses me to see you doing things with your daddy. Thanks for the blessings and as well as the heart smile and tears. ❤

Becky this year I used my dicer to dice my carrots into small little dices and then froze them for like fried rice and things as such as soups or anything really. They turned out to be absolutely amazing for this purposes there was no need to blanch them first they just worked out well, just a consideration.

When my niece and nephew were babies, my sister made all of her own baby food. With carrots she cooked them, pureed them and froze them in ice cube trays, then popped them out of the trays for storage in the freezer until she was ready to use. I wonder if your little guy would like something like that. Or maybe freeze dry them, powder them and store them that way until you want to feed carrots to the little guy. LOVE watching your channel, I get so many ideas for my own garden and kitchen!

Becky I also like to wrap most all my washed vegetables either in a cloth or paper towels for storage in the refrigerator. It sure helps prolong their freshness! Your carrot harvest is amazing! You have the sweetest parents!😊

Becky, research storing carrots in sand. I have done this for over 40 years and it works great. I usually can keep my carrots thru April or May. This method works well for parsnips and a similar method can be used for leeks.

For a cheap solution to wash your produce take a large Rubbermaid container fill with water and put your vegetables in a plastic basket with holes dip the basket in the large container and pull up and let dry in the baskets or put on your cardboard that way you can reuse the water just dip new baskets

Not to worry, we don't have venomous snakes in this part of the country 😊 It was likely a garter snake, which I grew up playing with and are a great friend in the garden.

Hi Becky!Just a reminder to be a little more gentle with your harvested veggies, especially if you plan on storing them. Banging them on the wood garden edges and throwing them into the bowls will bruise them and shorten their storage time.

Enjoy these moments with your parents...these days are over long before you are ready. You will have a lifetime to miss them 😢 you will be SO GLAD you have these days documented. As they continue to get older let them use the side by side so they won't hurt as bad after they help you. I know right now you can't imagine how aging feels but I assure you Mom and dad will be feeling some pains after this harvest. Mom helped a LOT last year. You're blessed with amazing parents!!

My husband gave me the best idea a few years ago with my mixed veggies that I had extras of that I grew to chop them to the size of the frozen mixed veggies that you get at the store for easy meals such as chicken pot pie! You should start a garden diary. My grandfather would document what he planted, quantity of plants and the yield for that year. It was a nice keepsake after he passed. Gardening and food preservation was a big part of my childhood. Just a suggestion

I leave my carrots in the ground all winter and harvest when needed. They are so sweet and tender crisp when harvested in the cold weather. I’m gardening in the Pacific Northwest in British Columbia, Canada

I chopped my carrots up in a few different sizes, small for soup or chunks for with roasts or sheet pan meals. I vacuum sealed and froze them. It’s been so nice having them already prepped and I can just add them to my cooking as needed.

If you take your onion tops, carrot tops and celery tops and dehydrate add a bit of salt and nutritional yeast you can make your own veggie bouillon.

My grandparents always put a paper towel in with their lettuce in an airtight container and it stayed crispy. It works well for me too. I’ll have to try it for carrots.

Would love your moms recipe for lemon zucchini bread. I'm also glad you got some fruit from those trombochini seeds. (Assuming those are the ones I sent), they are supposed to store extremely well. Watched a KZbin where they made supper with one that was a year old. Great harvest!

Absolutely awesome harvest . I cut up my carrots blanch for 3 minutes and freeze to use in recipes 🎉🎉

You can tell your mom that the tromboncino, also known as a Zucchino rapicante, can be picked green and used like zucchini, or let it mature to a tan color and use like a butternut. They are favorites here in the south where we have such a squash vine borer problem. Because they have smaller vines, they are a bit resistant to the borers. I grow mine on a hooped cattle panel. They are quite magical looking hanging.

Dear Becky, you are so lucky to have such adorable parents to help! Mine used to help me also and when they became ill and old, I turned the way and helped them, what I was able to do for them. Sweet memories for me..... 😢
