I loved Ada's appearance on ATK! I particularly appreciated that she told Dan that it would take several years to master pasta making (I don't remember the exact number) but it is possible. It seems that many people don't realize that really mastering a skill takes a lot of time and practice, but seeing her fluidity and elegance at her craft makes the effort seem so worthwhile

This is a SUPERB recipe. If a small restaurant in Italy offered me this dish, I would re-visit the restaurant over and over again. It's the small details that make this dish a stand-out. Heaven! I know there's a complicated world of intricate pasta shapes out there... But pappardelle are my favourite. That slippery, but butter soft mouthfeel does it for me every time. My "Last Meal" would be pappardelle with beef & mushroom stroganoff if I could choose...then I'll go happily. But I like the sound of this dish too, & in all my years have never heard of the leaves trick to keep the peas green. [I usually "shock/fix" them in cold water]. Ada seems to be an utter pappardelle artisan, loved watching her work. Many thanks for the video.

Hi James, stroganoff done well is a splendid dish which seems not as popular as it once was; this is a good thing - my school served up something truly dreadful under this name, and Wikipedia tells me there are dehydrated mixes for campers. best wishes, Vicky.

@@pastagrannies Hi Vicky, Stroganoff slowly seems to be making a comeback. Oddly people think I must be American when I chat online about it as I like it with noodles!? I have had it with rice which is common in many parts of Europe but for me that's third place behind the traditional Russian straw thin chips [fries] or those luscious noodles. I've had the dehydrated version [with rice] while away climbing. [it needed a slosh of brandy from the medicinal hip flask to make it better] It's okay for bought camping food but I doubt I'd eat it at home.

Ada is one of my favourite grannies! What interests me is the use of quite tall small diameter pans for cooking. Here in humid Peebles, everything would boil and you can forget air drying anything!! A great watch. You cannot beat pasta and peas with pancetta. Regards Stephen.

A true Nonna trick, celery leaves in the peas to preserve their colour. It's the nitrates in celery that help with this I'd guess.

This is a beautiful dish (although I can't eat it/don't know what to sub in for the fancy ham in context) and I hope someone tells her that working hands looking like working hands as they age *is* a form of beauty...she wouldn't scorn the strength and sweeping curves of a grand old olive just because it wasn't a straight smooth young hornbeam or something, I'm sure.

Pancetta is the same cut as bacon but it's air dried and not smoked. It's hard to find in the USA, even here in Pittsburgh where there are so many Italian Americans, and it's very expensive. My relatives in Rome would probably be aghast but I've used good quality American bacon and it tasted just fine.
