I'm using bedford, but I want to add a button on the header image. now it was there by default, but I had to delete it because I couldn't get the button options to link to a specific page to show up.

I believe in Bedford you add a button to the header image in the Page Settings > Banner area. Contact squarespace support for this one, they will help! squarespae.com/support
