Use a tiny flat head screwdriver to adjust the temp dials, not a phillips like i say by mistake in the video

why would my beater overload trip even without product/ both beater motors

good question. Is the machine 3 phase powered? If so, the motors might be running backward, there is a 50/50 chance this will happen and it is a simple electrical fix, by flipping two wires in a plug. We recommend having an electrician do it for safety reasons.
