While your revision of the translation of "couleuvre" to "grass snake" is correct, it shares the meaning "cobra" in the Portuguese from which it is borrowed. I have no idea what Flaubert knew of this, but if he did, he's certainly implicating something venomous or dangerous. This likely explains the translator's choice of "adder". One source translates the French as "viper".

Isabel Archer doesn't return because of her marriage to Osmond. She returns because she's promised to save Pansy. That entails being with Osmond and giving up Goodwood, but it's actually in opposition to Osmond's tyranny over the daughter he would have marry for money or worse. So while Goodwood asserts that they owe nothing, Isabel indeed owes living up to her promise to Pansy.
