Cos of 120 is also -0.5 so what should I go by. 60 or 120 I don't get that part. Should I do 180-120 to get the real results?

cos60 is not equal to -0.5 but rather 0.5. (Try it on your calculator) You need to understand that there can be more than one solution where cos theta is -0.5 because the cosine function is a continuous wave or sinusoidal function. The number of solutions will depend on what the given domain is. If your domain is between 0 and 180 degrees the only solution is 120 degrees. If the domain is between 0 and 360 degrees then there is a second quadrant where cosine is negative (quadrant 3), so then you would have to give both solutions, 120 degrees and 240 degrees. You can always double check your answer with a calculator 😊

One quick question, how do I know which special triangle to use given an angle?

Well, it would have to match with the angles in the special triangle. So, if it has a 30 degree angle then use the equilateral triangle.
