The rainbow falls trail right in downtown Gatlinburg is a cool trail. The 2 miles to the falls is awesome for befinners but if you stay on the trail you can continue to the top of mount Leconte, the highest peak in the smokies, and you can stay at the Leconte lodge at the top of the mountain which is only accessible by trail (or at least it use to be that way). Its pretty brutal though 6500 feet over about 6 miles so its a slow trug but ive heard its worth the climb. You can extend that hike by going off the other side of the mount or picking up the AT as well
