Cool song! Idea: how about trying out MIDI editing software? I use a program called MidiEditor (its a bit old but works very well and looks good to me). I can make music quite easily using it, since the interface is pretty user friendly. While Garageband works, it is somewhat limited in instrument and sound choice. MIDI solves that issue with soundfonts (and those you can also edit using other programs like Polyphone for adjusting the settings/sounds within). MidiEditor is however a Windows program, so you need a desktop/laptop. The program is intuitive imo. It also allows direct editing of MIDI-specific events, like tempo (Garageband's tempo is NOT dynamic, in contrast) and time signature (same story).
