The one thing I forgot is sumac!! We always add dried sumac to the cooked kebab it adds a nice sour touch.

I see a lot of recipes of Za'atar has Sumac in it as the key ingredient so do you add Sumac again at the end as a topping or do you omit the Sumac in the Za'atar?

I love sumac! Grows wild here! High vit c on it. Good with humus too. I love Afghani and Mid eastern good foods! Persian, Israeli, Saudi, Iraqi, all of it is so good!

Coming from an afghan, Every one of us argue which way is the best way to marinade it, so we can duplicate that flavor you remember as a child waking the streets of Kabul smelling the kabob odor, and remembering that simple bite of bread kabab and raw onion. I’m a meat connesoir but let me tell you, a true afghan lamb kabab is better then any piece of bbq in the world, bring it in a5 wagyu smagyu rib eye etc. Anyway I’m just saying great marination recipe. Mine is similar but no kiwi and no zatar. I actually use a little bit of Coca Cola…. Never fails…. Will try yours one day

@@AfghanCooks my family is abusive and insisted on turkey at thanksgiving. So on Saturday I made these kebabs and they were amazing. My one regret is store bought flatbread. But the kebabs were amazing. I also tried the “homemade” rose ice cream that was a huge hit. Thank you!

Afghani reminds me of Persian, Arab and of course Indian cuisines. I have had some Afghani style foods and the kabobs you have from there (well in that style) were fantastic!

Chilis - we don’t normally add any at all and in fact the heat didn’t come through at all on this one so 🤷🏽♀️
