We live on one of the largest lakes on Texas and catfish is a main staple food in the south. It can taste muddy because its a bottom feeder but soak it in milk or remove the skin and it usually works. We deep fry with a mix of southern spices, cornmeal and some use a little flour. Try it sometime. You will like it
