Hi sister, I am from Sri Lanka live in Australia, we cook the same way as the rice and coconut milk, we normally cook on a festival days and side dish as mix vegetables curry, but definitely not mix cucumber in the curry, eggplant, green banana, red pumpkin, carrots , in the side dish add curry powder, and little bit of tamarind juice, no add coconut milk for the dish, because we add coconut milk in the rice. As Sri Lankan back home, coconut breaking grating coconut is a main job in our cooking,. No matter what dish we add coconut milk. Very interesting to watch your cooking.
